Dumplings
INGREDIENTS: Self raising flour - 200 g (7 oz), Salt - * tsp, Shredded suet - 100 g (3* oz) beef or vegetarian suet, Dried mixed herbs - * tsp, optional, Cold water - to mix.
COOKING:1.Mix the dry ingredients with water to a soft, elastic dough, roll into balls and add to soups or stews half an hour before serving.
VARIATIONS:
Herb Dumplings - Include half an onion, finely grated, and increase herbs to 1 tsp.
Cheese Dumplings - Add 25 g (1 oz) grated cheddar or 1 tbsp. grated Parmesan cheese.
Watercress Dumplings - Add 1 tbsp. chopped watercress.
Curry Dumplings - Add * tsp. mild curry powder.
Paprika Dumplings - Add * tsp. paprika.
Caraway Dumplings - Add 1 tsp. caraway seeds.
