2 cups brown sugar
dash of salt
1/2 cup chopped pecans
3/4 cup cream
2 tablespoons butter
1 tablespoon vanilla
 
Dissolve sugar in cream until soft ball forms when tested in cold water
remove from heat, add butter,vanilla and nuts.  Let cool.. Once cool beat until creamy, press in buttered pan and cut in squares.

Dee, I make the fudge for our cookie/candy fest every year, and I'm tired of the same old chocolate and peanut butter fudge ( both the fool-proof kind  ).  I'm definitely going to try this one this year!  I'll let you know how badly I screw it up.

When I bought groceries earlier today I bought the ingredients to make this too.  I'll be making it in the next day or two.  This is one of my moms recipes she gave me a very long time ago.  I was hoping someone would try it.  I love this fudge.

I made a batch of this last night and did I ever screw it up.  I didn't cook the sugar and cream long enough and it didn't harden like it should have so while it's still eatable, it's better to eat it with a spoon than try to cut it in squares. 
 
Am going to make another batch this weekend and see if I can't do it right this time.  You have to bring the cream and brown sugar to just the right boil before it turns out good and it's not that hard to do but I was in a hurry and just thought it was ok when it wasn't.

I made some cocoa fudge a couple weeks ago from a recipe I found on the net (one of the product companies, Nestle, Hershey or Carnation, can't remember which), it directed you to cook the evaporated milk and butter for 4-6 minutes then add the cocoa, marshmallow cream and vanilla, stir to incorporate and spread in pan to cool, I cooked it 6 minutes - it came out like a brick.
