I had a three pound bag of fresh spinach i needed to use before it went bad so i made soup.I had 2 links of hot italian sausage and 2 links of sweet italian sausage/w mozzerella in the freezer. so i threw the sausages still frozen in the stock pot on low and covered them. Cooked till they were defrosted and beginning to brown. Removed them from the pot and cut them in small pieces. there was nice bit of slighlty greasy liquid in the bottom of the pan. i browned three small chopped onions in that then threw in the cut sausage and browned it all for a while.
 
Just as it began to get really dark and started to stick to the pan, i added one quart of chicken stock and stirred till all the brown stuck bits were incorporated. then i added a quart of water and one more quart of chicken stock, i then filled the pot to the top with fresh spinach waited about 15 mins and added more spinach and kept doing it till all th spinach was in and wilted down.
 
i added a bit of oregano, some sea salt and some fresh ground pepper and cooked for a bit.
 
and thats it its soup. Now you could easily serve it with rice, or noodles or barley if you want a little starch, i didnt add it to the soup, cause i want to freeze the left overs an didnt want it to get all gummy.

Well I have never heard of spinich soup but at one time in my life I'd never heard of pea soup either so I'll have to give this a try too.   Do any of you like the cold soups?  I don't at all.  I remember the first time I eve ate any cold soup.  I was in a restaurant in Houston and order this soup and when they brought it to me and I tasted it, it was cold and I asked the waiter to send it back because it was cold and she said "it's suppose to be served cold."
Before then I had never heard of cold soup.

I tried cold potato soup once (I know the name but I don't feel like looking it up to get the proper spelling. LOL), I didn't care for that so haven't tried any other cold soups.

You must mean Vichyssoise?   An old neighbor of ours used to make it and my daughter would call it her 'vicious' soup.

LOL! 'Vicious soup' - too funny. I love hot potato soup, not so much the 'baked potato' variety of it as the bacon gets soggy and I don't care for chunks of potato in the soup, but I do like lots of butter and a little sour cream in it.
