Great Food! : Nacho's Apple Cider Sauce

Nacho's Apple Cider Sauce
 
1/2 Gallon Apple Cider
1/8 tsp black pepper (or less)
1/4 # butter (usually a stick)
 
This one is easy, it just takes a while to make.
 
In a sauce pot, pour in most of the apple cider. Bring to a low boil, then reduce heat to medium. Reduce cider by half. Add the rest of the cider and black pepper. Reduce until it starts to get thick. Takes about 45 minutes to an hour.
 
Once it starts to thicken, reduce heat to low or turn it off. Let cool for a couple minutes, then swirl in the butter. The butter will thicken the sauce a bit.
 
This is a perfect sauce for any kind of pork, chicken, veal, beef, fish!
 
Simple to make, but be patient. You don't want to crank the heat for very long, because it can burn easily.
 
Add salt if you feel it needs it.
 
You'll love this sauce, period!

With this recipe, you can easily modify it by throwing in some peeled apple slices, cinnamon, cloves, or maybe sugar if the apple cider isn't very sweet. Pear slices would be good, too!

My BIL produces regular and hard (has an alcohol content) ciders. Which on do you use?
The sweetness depends on the apples. It varies from year to year. BTW, cider freezes well for storing.

Try to find "Honeycrisp Apple" cider. It's the best on the planet!
