I found a microwave fudge recipe and tried to make it three times. All three times, it turned into a crunchy slab of sugar. I used the same ingredients in different measures and made my own recipe. The original had too little cocoa and too much vanilla. This fudge is very creamy and very rich. If you like dark chocolate, you'll probably like this. My daughter ate most of my first batch.

Quick and Easy Fudge

3 2/3 cups of powdered sugar
2/3 cup of cocoa
1/4 teaspoon salt
1/4 cup of milk
1 teaspoon vanilla extract
1 stick of margarine
1 cup chopped nuts (optional)

Mix dry ingredients together in microwave safe mixing bowl. Melt margarine in microwave safe bowl. Pour melted margarine, milk, and vanilla into dry ingredients while mixing with electric mixer. When powdered sugar is well blended with the other ingredients, place the mixture which will be lumpy in the microwave for 45 seconds to one minute. Remove from microwave and mix until smooth. Mixture will be too thick to pour. Line a small casserole dish with waxed paper and press fudge into a bar shape about 3/4 of an inch thick. Chill for one hour, cut into squares, and hide from the kids.

Makes about a pound of fudge without the nuts.

Let me know what you think. I never thought of making fudge in a bowl with the ingredients listed. I've always made it on the stove in a pan and turned it to sugar. I think this is the first time I've made it and had it turn out great. It's also my first "recipe" that I ever came up with for candy. (big smiley face.)
