I got this recipe from my aunt in Italy this morning so I've never tried it yet.
 
2 1/2 large green peppers
 
2 1/2 large red peppers
 
2  onions
 
salt
 
dash of vinegar
 
1/4 cups of olive oil
 
1/4 cup of garlic, chopped, minced or crushed
 
1 1/2 pounds sweet Italian sausage, links
 
1 1/4 pound hot Italian sausage, links
 
1 Tablespoon thyme
 
1 Tablespoon oregano
 
2 1/2 Tablespoons dried basil
 
1 (15 ounce) jar marinara sauce
 
Cut pepper and onions into strips, 1/2 inch wide.
Bring a large pot of water, salt with a dash of vinegar to a boil.  When the water is boiling rapidly put in the sausage links and boil them for 15 minutes.  Rinse and cool.  Cut the cooled sausage links into thirds.
Heat the olive oil in a Dutch Oven.  When the oil is hot add the garlic, thyme, oregano and basil and cook them for 3 to 5 minutes on low heat.  Add the peppers and onions; cook for 10 minutes, stirring occasionally.  Then add the sauce and sausages and mix very well.  Cover and cook 10 minutes.  Do not allow the peppers to become too limp.
Serve alone, over pasta, rice, or in a hot sandwich.
This is enough for 6 or 8 people.
