I used to go through all that but nowadays look for bottled Progresso roasted Italian peppers and peppers (I get two jars because they're small) and add, liquid included, to my already cooked sausage and simmer for awhile so the oil & pepper taste get into the meat. Served on a lightly toasted roll it takes me back to sitting on the boardwalk at Seaside Heights, New Jersey, watching the waves, smelling the salt water, in the glow and sounds of the rides, while eating a sausage & pepper sandwich bought from one of our favorite stands. |
