Bacon Mushroom Swiss Meatloaf

12 ounces bacon, diced
4 medium white mushrooms, chopped
1 small onion, finely chopped
1 1/2 lbs. extra lean ground beef
1 egg
1/4 cup evaporated milk or half and half
6 ounces shredded Swiss cheese
1/2 cup corn flake crumbs

Preheat oven to 350. In a large skillet, cook bacon until crisp but not burned. Remove with a slotted spoon to paper towels to drain and cool. Remove all but a tablespoon of the bacon fat from the skillet and saute the mushrooms and onions until tender. Allow to cool slightly.

In a large bowl, mix the beef, egg, and milk. Add the mushroom/onion mixture, all but a few spoonfuls of the Swiss cheese and all but one tablespoons of the bacon bits. Add the corn flake crumbs and mix well until blended. Shape into a loaf and place in a large loaf pan.

Bake at 350 for about an hour, or until cooked through. Drain fat from the pan and sprinkle the reserved cheese and bacon on top. Bake an additional 5 minutes, or until cheese is bubbly. Allow to rest for 10 minutes before slicing.

Yield: 4 to 6 servings.

Cajun Meatloaf

1 medium yellow onion, chopped
1 rib celery, chopped
1/2 medium green bell pepper, chopped
2 green onions, minced
1 clove garlic, minced
2 bay leaves
3/4 teaspoon salt
1/2 teaspoon cayenne pepper
1/2 teaspoon black pepper, freshly ground
1/4 teaspoon ground cumin
1/4 teaspoon nutmeg
1 tablespoon Worcestershire sauce
1/4 teaspoon Tabasco sauce
2 tablespoons unsalted butter
1/4 cup milk
1/4 cup catsup
1/2 cup bread crumbs, fine, dry
1 pound lean ground beef
1/2 pound lean ground pork shoulder
2 eggs, slightly beaten

Preheat the oven to 375F. Mix the onion, celery, bell pepper, green onions, garlic, bay leaves, salt, cayenne pepper, black pepper, cumin, nutmeg, Worcestershire sauce, and Tabasco sauce in a medium bowl.

Melt the butter in a heavy 10 inch skillet over moderate heat. Add the vegetable/spice mixture, and cook, uncovered, for 6 minutes, stirring constantly, until the onions and peppers are soft. Remove from the heat and let cool until warm to the touch. Discard the bay leaves. Stir in the milk, catsup and bread crumbs.

In a large bowl, combine the beef, pork, eggs, and the bread crumb mixture.

Pack the meat mixture into a greased, 9 x 5 x 3 inch loaf pan. Bake the meatloaf, uncovered, for 50 to 55 minutes or until it is dark brown and pulls away from the sides of the pan. Allow to rest 10 minutes before slicing.

Cape Cod Cranberry Meatloaf

1/4 cup whole cranberry sauce
3/4 cup dark brown sugar, packed
2 1/2 pounds ground chuck
1/2 cup milk
1 medium onion, finely chopped
1/4 cup ketchup
1/2 cup plain bread crumbs
2 large eggs, lightly beaten
1/2 teaspoon dried thyme
1/2 teaspoon dried marjoram
1/4 teaspoon white pepper
1/2 teaspoon dried rosemary
1 teaspoon salt
2 bay leaves

Preheat the oven to 350F. Lightly oil a 9 x 5 x 3 inch loaf pan. In a small bowl, combine the cranberry sauce and brown sugar.

Place the cranberry sauce mixture in the bottom of the prepared loaf pan.

In a large bowl, combine the remaining ingredients except the bay leaves and mix well. Set the meat loaf mixture in the pan on top of the sauce.

Top the loaf with the bay leaves and bake for 1 1/2 hours or until done.

Allow the loaf to cool for 20 minutes. Remove the bay leaves. Very carefully turn the loaf onto a serving plate so that the sauce side is up. Drizzle the pan juices over the loaf.

Caribbean Meatloaf

1 1/2 pounds 95% lean ground beef
15 ounce can tomato sauce, divided
1/4 cup Egg Beaters® 99% egg substitute, or 2 fresh eggs
1/2 cup onion, minced
2 teaspoons Worcestershire sauce
1/4 teaspoon salt
1/4 teaspoon pepper
1 cup plain dry bread crumbs
8 ounce can crushed pineapple in juice, drained
1 1/2 teaspoons brown sugar
1 1/2 teaspoons lime juice
1 teaspoon Worcestershire sauce
1/4 teaspoon ground allspice
1/8 teaspoon salt
1/8 teaspoon ground ginger
1/8 teaspoon dry mustard

Preheat oven to 350F.

In a large bowl, combine ground beef with 1/2 cup tomato sauce, egg substitute, onion, Worcestershire sauce, salt and pepper and mix well. Add bread crumbs and mix well.

Shape mixture into a loaf and place in a 8 x 4 loaf pan. Bake for 1 hour and 5 minutes.

Combine remaining ingredients with remaining tomato sauce. Pour over meatloaf and bake an additional 5 minutes. Allow to rest for 10 minutes before slicing.

Honey Mustard Meatloaf

1 1/2 pounds lean ground meat
1/3 cup dry bread crumbs
2 eggs
1/2 cup chopped onion
1 teaspoon basil leaves
1/2 teaspoon salt
1/4 teaspoon pepper
3 tablespoons Dijon style mustard
3 tablespoons honey
2 tablespoons green onions, chopped

Preheat oven to 350. Combine ground meat, bread crumbs, onions, basil, salt, and pepper. Stir in eggs, mixing lightly, but thoroughly.

Shape into loaf. Place loaf in baking pan, or on a baking sheet (with sides).

Combine honey and mustard, brush half of the mixture on loaf.

Bake uncovered for 30 minutes. Brush with remaining honey and mustard mixture.

Bake for 20 to 30 more minutes. Remove from oven, sprinkle chopped green onion. Serves 6 to 8.

Italian Meatloaf

2 pounds lean ground beef
1/2 teaspoon salt
1 pound Italian sausage
1/4 teaspoon pepper
1 1/2 cups cracker crumbs
1 teaspoon oregano
2 eggs, beaten
1 clove garlic, minced
1 medium onion, chopped
1 cup pizza sauce
1 bell pepper, chopped

Filling:
1/2 pound boiled ham, sliced thin
1 8 ounce can mushrooms, drained
8 ounces grated Mozzarella cheese

Mix first eleven ingredients together. Reserve 1/4 cup pizza sauce. On a large sheet of wax paper, pat meat into a 10 x 13 inch rectangle. Arrange ham on top of meat mixture, leaving a small margin. Spread mushrooms over ham. Sprinkle cheese over all. Reserve small amount of cheese.

Start at 10 inch side and roll meat like a jelly roll. Use wax paper to lift. When rolled tightly, seal edges.

Place seam side down in a 9 x 13 inch pan. Brush with reserved pizza sauce.

Bake 1 1/4 hours at 375F, 10 minutes. Before done, sprinkle reserved cheese over and finish baking. Serves 10 to 12.

Mushroom Soup Meatloaf

1 can cream of mushroom soup
2 lbs ground beef
1 pkg dry onion soup mix
1/2 cup dry bread crumbs
1 egg beaten
1/4 cup water

In a large bowl mix 1/2 cup of mushroom soup, ground beef, onion soup mix, bread crumbs and egg.

Shape mixture into a 4x8" loaf and place into a greased 8x12" loaf pan, bake at 350°F for 1 hr 15 min or until done. Spoon off drippings, reserve.

In saucepan, beat remaining soup, water and drippings at med. heat until boiling. Stir occasionally. Thin sauce w/additional water if desired. Spoon over meat loaf servings.

Pizza Meatloaf

2 pounds hamburger
1 8 oz. jar pizza sauce
1 cup crackers, crushed
1/4 cup green pepper
2 eggs
1/2 cup mozzarella cheese
1/2 cup parmesan cheese
1/2 cup onion chopped
1 tsp. Season Salt
1 tsp. oregano
1/4 tsp. pepper

Combine meat, eggs, 3/4 of the sauce, crackers, parmesan cheese, 1/4 cup of the mozzarella, onion, green pepper, salt, oregano and pepper. Mix well. Pat into and 8x8" pan.

Bake at 350°F for 50 mins. Drain off fat. Spread on remaining pizza sauce.

Bake 10 minutes. Sprinkle on remaining mozzarella cheese and bake 3-4 minutes or until cheese melts!

Pot Roasted Meatloaf

1 pound ground beef
2/3 cup evaporated milk
1/3 cup dry bread crumbs
1/4 cup ketchup or chili sauce
2 teaspoons Worcestershire sauce
1 teaspoon oregano
1 teaspoon salt
1/4 teaspoon pepper
3 medium potatoes; peeled and sliced 1/4 inch thick
3 medium onions, sliced 1/4 inch thick
3 carrots, sliced 1/4 inch thick
2 teaspoons parsley, chopped
1/2 teaspoon salt
1/4 teaspoon pepper

Preheat oven to 375F. In large bowl, combine beef, milk, bread crumbs, ketchup, Worcestershire sauce, oregano, salt and pepper.

Shape into a loaf in the center of 13 x 9 baking pan. Place vegetables around meat; sprinkle with remaining seasonings. Cover with foil.

Bake for 1 hour or until vegetables are tender.

Uncover and bake 10 minutes more to brown meat. Allow to set for about 15 minutes to make slicing easier.

Spicy Chile Cheese Meatloaf

2 eggs, slightly beaten
1 pound pork sausage, spicy
1 pound ground beef
1 small onion, chopped
1 cup quick cooking oats
2 teaspoons garlic salt
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1 cup Cheddar cheese; grated, plus for garnish, optional
1 cup chunky salsa, plus extra for topping, if desired

Preheat oven to 350F. Combine all ingredients in a mixing bowl.

Shape in loaf pan and bake for 50 to 60 minutes, until quite firm.

Serves 6 to 8.

Stuffed Meatloaf

2 eggs
2 T milk
1/4 cup ketchup
1 1/2 t salt
1/8 t pepper
1 1/2 pounds lean ground beef

STUFFING

1/2 pound fresh mushrooms, sliced
1 medium onion, chopped
2 T butter or margarine
2 cups soft bread crumbs
2 T chopped fresh parsley
1/2 t dried thyme
1/2 t salt
1/8 t pepper

In a large bowl, beat eggs, milk, ketchup, salt and pepper. Add beef and mix well. Pat half of the meat mixture into a greased 9x5x3" loaf pan; set aside. For stuffing, saute the mushrooms and onion in butter until tender, about 3 minutes. Add bread crumbs; parsley, thyme, salt and pepper; saute until crumbs are lightly browned. Spoon over meat layer; cover with remaining meat mixture and press down gently. Bake at 350°F for 1 hour until no pink remains, draining fat when necessary.

Serves 6

Sweet and Sour Meatloaf

1 15 ounce can tomato sauce
1/2 cup brown sugar
1/4 cup vinegar
1 teaspoon prepared mustard
2 pounds lean ground beef
1 pound ground pork
2 eggs, slightly beaten
2 small onions, minced
1/2 cup fine soft bread crumbs
1/4 teaspoon pepper

Mix the first four ingredients in a small bowl. This is the sauce. Mix the other ingredients and a cup of the sauce in a large bowl. Place the mixture in a 2 quart loaf dish.

Press into a loaf, with a raised center so that there is space for the fat to collect.

Pour 1/4 to 1/2 cup sauce over the loaf. Bake at 375F for 1 hour 15 minutes, basting with 1/4 cup sauce after 30 minutes. Makes one juicy loaf.

Tangy Meatloaf
Makes 8 servings

1 pound ground beef
1/2 cup dry bread crumbs
1 egg
Garlic powder to taste
1 dash Worcestershire sauce
1/3 cup ketchup
1/4 cup packed brown sugar
1/4 cup pineapple preserves

Preheat oven to 350°F. In a large bowl, combine the ground beef, bread crumbs, egg, garlic powder and Worcestershire sauce. Mix well, and place into a 9x5" loaf pan. Bake in preheated oven for 30 to 50 minutes. Meanwhile, in a separate medium bowl, stir together the ketchup, brown sugar and pineapple preserves. Pour over the meatloaf about 20 minutes before removing from oven.

Per Serving: 275 Calories; 16g Fat; 11g Protein; 22g Carbohydrate; 75mg Cholesterol; 232mg Sodium

Tropical Meat Loaf

1 1/2 pound lean ground beef
1 large egg
1 cup mashed ripe banana
1/2 cup quick cooking oats
1/2 cup chopped green pepper
1 teaspoon salt
1 teaspoon prepared mustard
1/4 teaspoon nutmeg
1/8 teaspoon allspice
2 slices bacon
2 tablespoons chopped onion
3 tablespoons orange marmalade

Heat the oven to 350F. Mix all of the ingredients, except the bacon and marmalade, together. Spread the mixture in an ungreased loaf pan, 9 X 5 X 3 inches.

Crisscross the bacon slices on the top of the meat mixture and spread the marmalade over the whole thing. Bake, uncovered for 1 to 1 1/4 hours.

Drain off the excess fat and let stand for 5 to 10 minutes before slicing.

Yummy Meatloaf

1 1/2 pounds ground beef
1/2 cup ketchup
2 Tbl mustard
1 Tbl dijon mustard
1 egg
1 clove garlic
1 package Onion Soup Mix
2 ribs celery
2 Tbl worcestershire sauce
pepper to taste
salt to taste
1/2 cup cheddar cheese
2 handfuls crackers
3 or 4 slices raw bacon

1. Prepare all ingredients. Mince or press garlic. Slice celery. Shred cheese.

2. Place all into a large bowl. Mix with hands until well blended. Add more of seasonings to taste (more or less ketchup and mustard according to your tastes also the less of these, the more dry it will be. If you want a very wet meatloaf, use more)

3. Put into a loaf pan, and pat down. Place bacon slices (still uncooked) on top. They will cook up and give the loaf flavor during cooking time. You can skip the bacon and spread ketchup on top if desired.

4. Bake at 350-400°F until done. (about 30-40 minutes usually)

Upside Down Meatloaf - Logan

½ cup light brown sugar

½ cup ketchup

1 ½ lbs. ground beef

1 small onion, chopped

½ tsp. salt

¼ tsp. black pepper

1 egg, beaten

¾ cup milk

¾ cup crackers, crumbled (I used Saltines)

¼ tsp. ground ginger

Butter bottom and sides of loaf pan.  (I use a glass loaf pan and I also used Pam spray)

Press brown sugar firmly on the bottom of the pan and spread ketchup over the brown sugar.

Mix together the remaining ingredients and shape into a loaf and place on top of the brown sugar and ketchup.

Bake at 350º for one hour.  Turn out onto a platter.  The brown sugar and ketchup will create the sauce
