Spinach Feta Bread
1 pound frozen white bread dough, thawed 1 cup crumbled feta cheese 1/3 cup light cream cheese 1/2 tablespoon dried oregano 1/4 teaspoon salt 14 ounces artichoke hearts, drained, chopped 10 ounces frozen spinach, thawed, squeeze dry 3 cloves minced garlic 1 large egg white 2 tablespoons fresh grated Parmesan cheese
Combine feta cheese with the next 7 ingredients in a bowl. Roll dough into a 16 x 10 inch rectangle on a lightly floured surface. Spread spinach mixture over dough, leaving a half inch border. Roll up along longest edge, jelly roll style, and pinch the edges and ends to seal tightly. Place the roll, seam side down, on a baking sheet which has been sprayed with cooking spray. Cut 14 slits across top, diagonally. Cut and let rise in a warm place for one hour or untl doubled in size. Preheat oven to 350ºF. Sprinkle parmesan cheese over loaf, then bake for 45 minutes or until golden brown. |
