4 - 6 boneless/skinless chicken breasts - boiled and cooled
1 - Large can Enchilada sauce (I have to use mild for kids)
4 cups of 4-flavor Mexican cheese shredded
Wraps/floured tortillas - I use the larger ones
Cut chicken into bite sized pieces, place into a mixing bowl and mix with 2/3rds of the cheese, put equal portions into floured tortillas (8) and line a greased 13 x 9 pan, cover with Enchilada sauce
Cover with foil and Bake at 350 degrees for 30-40 minutes -add remaining cheese, cook until melted. Let stand for 10-15 mins. before serving. I cut each enchilada down the middle and makes 16 servings.
