This is an "improvised" recipe from Barefoot Contessa
2 or 3 boneless/skinless chicken breasts (cut into bite-sized pieces)
2-3 tbsp. oil (I use vegetable, but olive would work if you like it)
2-4 cloves of garlic (used to flavor the oil. You'll add more later)
1 tsp red pepper flakes (more or less to taste)
1 lemon (using both zest, and juice)
cooked pasta of your choice (linguini or angel hair work well)
Put oil in skillet, along with garlic cloves and pepper flakes. Saute chicken pieces until just done. Remove chicken & garlic. Add 1 tsp (more or less to taste) of minced garlic to oil. Add back the chicken, as well as cooked pasta. Squeeze lemon* over entire pan. Sprinkle with lemon zest. Stir together.
Serve with Garlic Bread
*More lemon juice may be needed, depending on how lemony you like it. Just be sure to add, then taste...add, then taste.
