   2                    Eggs -- beaten
   2      tablespoons   Whipping cream
   2      tablespoons   Milk
   2      slices        Bread -- torn up
   1      tablespoon    Onion -- dried minced
     1/2  tablespoon    Salt
   2      teaspoons     Horseradish -- prepared
     1/4  teaspoon      Pepper -- black
     1/4  teaspoon      Thyme -- dried
     1/2  teaspoon      Mustard -- dry
   2      pounds        Ground beef -- lean
     1/2  cup           Butter -- sweet
     1/2  cup           Catsup

Light a charcoal fire.

Mix eggs with cream and milk, then add torn-up bread onion,
salt, horse- radish, pepper, thyme, and dry mustard.
Stir well, let stand for 10 minutes, then stir well again, until all is well
moistened and the bread is no longer in pieces.  Add ground beef and mix well.

Melt butter with catsup and keep warm.

Measure out beef in 1/2 cup increments and form patties.
Grill over hot coals on one side.  Turn and brush with butter-catsup mixture.
Grill other side.  Serve hot.

     3/4  cup           Chili sauce
   4      teaspoons     Prepared mustard
   4      teaspoons     Prepared horseradish
   4      teaspoons     Worcestershire sauce
   1      tablespoon    Onion -- finely chopped
   2      teaspoons     Salt

ds Pepper 12    Hamburger buns; split and  In mixing bowl, thoroughly combine ground beef,
chili sauce, mustard,horseradish, worcestershire sauce, onion, salt, and pepper; mix well.
  Form into 12 patties. Grill over medium hot heat for 5 minutes.
Turn patties and grill till of desired doneness, about 3 minutes more.
Serve patties on hamburger buns.

   1      tablespoon    Fresh jalapeno chile -- minced

     1/4  teaspoon      Ground coriander
     1/4  teaspoon      Ground cumin
     1/4  teaspoon      Salt
     1/4  teaspoon      Pepper -- fresh ground
                        -----CHEESE-----
   1                    Nonfat mozzarella cheese
                        -----SERVING-----
   4                    Tortilla
   4                    Tomato slices
                        Cliantro sprigs
   1      tablespoon    Commerical taco sauce

Mix the burgers ingredients together; form into burgers of equal size
about 1/4 inch thick without compacting the meat.
Sprinkle the seasoning mixture of spices on both sides of patty.
Grill or broil, 4" from souce of heat, for 3 minutes on each sides for medium-rare patties.
Place the mozzarella cheese on center of each patty.
  Cook for another minute and until cheese melts.
Serve each patty on a warmed 8" flour tortilla, topped with a tomato slice,
cilantro sprigs, and taco sauce

   1      pound         Ground beef
   4                    Squares heavy duty foil
          (1            16x16 inches)
   4                    Carrots -- chopped
   1      can           New potatoes -- sliced (16oz)
   2      small         Green peppers -- chopped
                        Dehydrated onion flakes
                        Worcestershire sauce
                        Salt & pepper to taste

Separate the meat into 4 portions.  Place each portion in the center of a aluminum foil square.  Top with equal portions of chopped carrots, potatoes and bell peppers.  Season with dehydrated onion flakes, Worcestershire sauce, salt and/or pepper to suit your taste. Seal the foil, check for leaks.  Place on the coals for 10 to 15 minutes per side.

Nutritional information: per serving: 389 calories; 22g fat; 548mg sodium; 95mg cholesterol

     1/4  cup           Finely chopped Green Pepper
   1      pound         Ground Turkey or Lean Beef
     1/4  cup           Finely chopped Onion
   2      tablespoons   Grated Parmesan Cheese
     1/4  cup           Finely shredded Carrot
     1/8  teaspoon      Pepper
     1/4  cup           Fine dry bread Crumbs
     1/2  teaspoon      Salt
                        Med Tomato -- sliced

In a large bowl combine egg white and bread crumbs.(if using beef, stir in 2 T water)
Stir in carrot, onion, green pepper, salt, and pepper.
Add Parmesan cheese and ground meat; mix well.
Shape meat mixture into four 3/4" thick patties.
Spray a cold grill rack with Pam. Then place rack on grill.
Grill burgers on an uncovered grill directly over medium coals for 7 minutes.
Turn and grill 8-11 minutes or till no pink remains.
Place 1 tomato slice atop each burger and grill 1 minute more.

   6      Ounces        Fresh crabmeat
   1 1/2  Cups          Fresh white breadcrumbs
     1/2  Cup           Green onions -- chop
   4 1/2  Tablespoons   Mayonnaise
   1      Teaspoon      Old Bay Or Other Seafood Seasoning
   1                    Egg yolk
   1 1/2  Tablespoons   Dijon mustard
                        Vegetable oil
   4      Slices        French bread

Mix crabmeat, 1 c breadcrumbs, green onions, 2 Tbsp mayonnaise and Old Bay seasoning
in medium bowl. Form mixture into four 2-1/2" diameter patties.
Place remaining 1/2 c breadcrumbs in shallow bowl
. Dip patties into crumbs, coating completely.
Mix remaining  2-1/2 Tbsp mayonnaise with mustard in small bowl to blend.
Prepare barbecue (medium-high heat) or preheat broiler.

Brush barbecue rack with oil. Grill burgers until golden brown, about 4 minutes per side.
Grill bread slices until lightly toasted, about 1 minute per side.
Spread toasts with mustard dressing. Top each with a burger. Can be doubled.

   1      pound         hot italian sausage -- casings removed
   8      ounces        ground pork
   3      cloves        garlic -- pressed
   2      teaspoons     dried italian seasoning -- crumbled
     1/4  cup           oil-packed sun-dried tomatoes -- drained and minced
     1/4  cup           mayonnaise
   4      slices        onion -- 1/4" thick
   1      large         red bell pepper -- quartered
                        -- lengthwise
   4      slices        provolone cheese -- 1/4" thick
   4                    onion rolls -- halved horizontally

Mix first 4 ingredients in large bowl. Season with pepper.
Divide mixture into quarters. Shape each into 3/4-inch-thick patty.
Mix tomatoes and mayonnaise in small bowl to blend. (Can be prepared 1 day ahead.
Cover patties and tomato mayonnaise separately and chill.)

Prepare barbecue (medium-high heat).
Grill burgers, onions and peppers until burgers are cooked through and onions
and peppers are lightly charred, turning occasionally, about 10 minutes.
Move peppers and onions to cool side of grill. Top burgers with cheese
. Place rolls on grill cut side down. Cover with lid and cook until cheese
melts and buns are heated through, about 2 minutes. Transfer buns to plates.
Spread 3/4 tablespoon mayonnaise mixture over each bun half.
Top with burger, then bell pepper and onion. Cover with top half of buns and serve.

   8      medium        Portabello mushrooms
   1      cup           Olive oil
     1/3  cup           Fresh lemon juice
   5                    Cloves fresh minced garlic
   2      bn            Fresh basil -- chopped
   1      bn            Fresh oregano -- chopped
   3      tablespoons   Fresh parsley -- chopped
   1      teaspoon      Fresh thyme -- chopped

Salt and freshly ground black pepper to taste 8 slices mozzarella cheese
8 kaiser rolls (or 2 loaves of Italian Bread) 8 romaine lettuce leaves 8 slices large, fresh tomato
Peel the mushrooms; brush away any dirt before you cut away the stems.
Combine the oil, lemon juice, garlic, fresh herbs, salt and pepper to make a marinade.
Add the mushrooms
and the sliced mozzarella; marinate at room temperature for about an hour.
Grill the mushrooms over hot coals for about 2 minutes on each side.
Remove from the grill and allow to rest for 5 minutes.
Serve the mushrooms on lightly toasted kaiser rolls with the lettuce, sliced tomatoes and marinated
mozzarella cheese.  Cut each roll into quarters and serve.

                        Salt & Freshly Ground pepper
   2      tablespoons   Butter Or Regular Margarine
   1      cup           Onion -- thinly sliced
   3      tablespoons   Catsup
   1 1/2  tablespoons   Prepared mustard
   4                    Hamburger buns, split
                        Toasted and buttered
                        -----GARNISHES-----
                        Pickle Slices
                        Onion Slices
                        Lettuce Leaves
                        Tomato Slices

Mix the ground beef and the salt and pepper together in a bowl, blending well.
Shape into 4 patties about 1/4-inch thick. Place the patties on a grill 4 to 6 inches
from the heat over grey-hot coals.
Grill about 4 minutes on each side or to the desired doneness.
Meanwhile, on the same grill in a small saucepan, melt the butter
and add the 1 cup of sliced onion.  Cook until crisp tender.
Remove the onion with a slotted spoon and reserve.
Stir the catsup and mustard into the butter left in the sauce pan
and heat to serving temperature. When the hamburgers are done,
place each one on a toasted bottom, and top first with some of the
cooked onion and then a dollop of the catsup-mustard mixture and then garnish as desired.

canned water-packed unsweetened pineapple with 1 ts Worcestshire sauce.
Grill until pineapple is heated through and seared with grill marks,

   4      slices        Low-fat Swiss cheese
   4      slices        Rye bread
   4      tablespoons   Russian Dressing

Mix beef, onion, and ground pepper together and form 4 patties of equal size about 3/4" thick. 
Grill or broil, 4" from souce of heat, for 3 minutes on each side for medium-rear.
Place 1 to 2 tb on the center of each patty and top with one 1 oz slice of low-fat Swiss cheese.
Grill for 1 to 2 minutes, until the cheese melts. 
Serve each patty open-face on a slice of toasted or grilled light rye bread.
Tope with each serving with 1 tb Russian Dressing.

   1      cup           Minced onions
   1      cup           Grated carrots
   1      cup           Grated  turnips
   1      cup           Grated zucchini
   1      cup           Grated beets
     1/2  teaspoon      Chopped garlic
     1/2  teaspoon      Ground cumin
     3/4  tablespoon    Mixed dried dill -- and tarragon
     1/4  cup           Quick-cooking rolled oats -- uncooked
     1/4  cup           Water
   1      cup           Mashed potatoes
     1/4  cup           Chopped hazelnuts
     1/3  cup           Cooked rice
                        Salt and pepper to taste
                        Olive oil for sauteing -- optional

Heat 1 tablespoon oil in a large skillet. Add onions, carrots, turnips, zucchini,
beets, garlic, cumin and herbs. Saute until vegetables begin to wilt, about 3 to 5 minutes.
Allow to cool slightly.

Soak oats in water for 5 minutes, then drain and press out excess water.
Add to vegetable mixture along with potatoes, hazelnuts and rice.
Season with salt and pepper.

Form mixture into 8 patties.
Grill patties on well oiled vegetable grill, or saute in olive oil for 3 to 4 minutes
on each side, until golden brown.

Per patty: 106 calories, 4 gm. fat, 0 mg.
cholesterol, 158 mg. sodium.
