2 small packages lime Jello
2 cups cold 7-Up (replaces cold water in Jello)
1 8oz. brick cream cheese (room temp)
1 sm. can crushed pineapple (drained)
1 c. chopped pecans
Prepare jello with boiling water, and pour into glass container (I use a baking dish). Do not add cold 7-Up. Stir in the cream cheese, mashing as necessary. (It takes a while to get it all mixed in. Small lumps are common, and perfectly alright). Slowly pour in cold 7-Up and mix. Add pineapple and combine. Sprinkle with chopped pecans. Chill in refrigerator 8 hours or overnight.
