1/2 STICK OF BUTTER
1 CUP CHOPPED ONIONS
1 1/2 CUPS CHOPPED CELERY, LEAVES AND STALKS
2 TART APPLES
1 1/2 CUP CHOPPED CHESNUTS, EITHER CANNED OR FRESH
1/2 CUP DRAMBUIE
1 TEASPOON SAGE
1 TEASPOON SALT
1/2 TEASPOON PEPPER
PINCH OF ORSEMARY
8 CUPS SOFT BREAD CUBES (10 CUPS IF OMITTING CHESTNUTS)
1/2 CUP CHICKEN BROTH OR WATER
Melt butter in large skillet. Add onion, celery, and apple. Saute until tender. Add chesnuts. Heat Drambuie in a small pan, ignite carefully and our into skillet. Shake pan until flame dies down ( I don't ignite it) Stir in spices, mixing well.
Put bread cubes in a large mixing bowl. Stir in mixture from skillet. Add chicken broth to moisten.
Makes enough stuffing for a 12 pound turkey.
