So I was thinking about this recipe last night and I wonder if you could take regular baking potatoes and cook them this way (Minus the cinnamon, Brown Sugar & nuts of course LOL!) But you know with the milk and a low fat cream cheese, maybe add some garlic powder and parsley?  I think it would make a great twiced baked potato and without all the added fat of the butter.  I may give it a try next weekend.
