Pan Fried Halibut Steak with Light Green Sauce
  Prep Time: 10 Minutes
Cook Time: 15 Minutes
Ready In: 25 Minutes
Yields: 4 servings
"A delightful and rich halibut recipe with a memorable herbed white wine cream sauce."
INGREDIENTS:
4 (8 ounce) halibut steaks
salt and pepper to taste
1/2 cup all-purpose flour for
dusting
1/4 cup melted butter
1/4 cup dry white wine
1 lemon, juiced
1/2 cup heavy cream
2 tablespoons finely chopped
fresh parsley
4 tablespoons finely chopped
fresh basil
2 tablespoons drained capers
DIRECTIONS:
1. Rinse the halibut steaks and pat dry. Season with salt and pepper, then dust with flour.
2. Melt the butter in a large skillet over medium-high heat. Fry the halibut steaks in the butter for 4 to 5 minutes, until nicely browned. Remove from the skillet and keep warm.
3. Reduce the heat to medium, and stir the wine into the pan, scraping up any browned bits stuck to the bottom. Mix in the lemon juice, then stir in the cream. Simmer for 2 to 3 minutes or until it starts to thicken. Season with parsley, basil and capers, and stir for another minute. Serve halibut with sauce spooned over it. Garnish with additional parsley if desired.

Heavenly Halibut
Prep Time: 15 Minutes
Cook Time: 10 Minutes
Ready In: 25 Minutes
Yields: 8 servings
"Rich, cheesy topping goes perfectly with mild flavored halibut."
INGREDIENTS:
1/2 cup grated Parmesan
cheese
1/4 cup butter, softened
3 tablespoons mayonnaise
2 tablespoons lemon juice
3 tablespoons chopped green
onions
1/4 teaspoon salt
1 dash hot pepper sauce
2 pounds skinless halibut fillets
DIRECTIONS:
1. Preheat the oven broiler. Grease a baking dish.
2. In a bowl, mix the Parmesan cheese, butter, mayonnaise, lemon juice, green onions, salt, and hot pepper sauce.
3. Arrange the halibut fillets in the prepared baking dish.
4. Broil halibut fillets 8 minutes in the prepared oven, or until easily flaked with a fork. Spread with the Parmesan cheese mixture, and continue broiling 2 minutes, or until topping is bubbly and lightly browned.

Halibut Supreme
  Prep Time: 15 Minutes
Cook Time: 25 Minutes
Ready In: 40 Minutes
Yields: 6 servings
"This recipe keeps halibut moist beyond belief! The sauce is delightfully rich, but not overpowering, with just a slight kick to it."
INGREDIENTS:
1 cup shredded Cheddar
cheese
1/2 cup mayonnaise
1/2 cup sour cream
2 tablespoons all-purpose flour
1 1/2 teaspoons lemon juice
1 tablespoon diced onion
1/8 teaspoon ground cayenne
pepper
2 pounds halibut steaks
DIRECTIONS:
1. Preheat oven to 425 degrees F (220 degrees C). Lightly grease a medium baking dish.
2. In a bowl, mix the Cheddar cheese, mayonnaise, sour cream, flour, lemon juice, onion, and cayenne pepper.
3. Arrange the halibut steaks in the prepared baking dish, and cover with the Cheddar cheese mixture.
4. Bake 10 minutes in the preheated oven. Reduce heat to 350 degrees F (175 degrees C), and continue baking 15 minutes, or until fish is easily flaked with a fork.

Bacon-Wrapped Halibut
  Yields: 36 servings
"My husband and I team up to make this appetizer, though it is easy to do alone. Tasty, easy and vanishes as soon as it is placed on the table. What more could you ask for!"
INGREDIENTS:
18 slices bacon, cut in half
1 1/2 pounds halibut steaks,
cubed
ground black pepper to taste
toothpicks
DIRECTIONS:
1. Cook bacon in a large skillet over medium-high heat until just beginning to brown, but still soft. Set aside until cooled enough to handle.
2. Preheat your oven's broiler. Season the halibut with pepper. Wrap one piece of bacon around each cube of fish, and secure with a toothpick. Place on a baking sheet.
3. Broil for about 5 minutes, turning once, until fish is cooked through and bacon is crisp. Transfer to a platter, and serve warm.

Halibut Divine

Ready In: 1 Hour 15 Minutes
Yields: 4 servings
"I ate this at a party given by some friends of my uncle's. They had been to Alaska on a fishing trip and had come back with TONS of salmon and halibut. This is one of the yummiest things I have ever eaten!"
INGREDIENTS:
3 tablespoons olive oil
1 tablespoon melted butter
1 tablespoon lemon juice
3 tablespoons dry mustard
1 teaspoon salt
1 teaspoon pepper
1 pound halibut fillets, cubed
1 (8 ounce) container sour
cream
2 tablespoons grated
Parmesan cheese
1 (2.8 ounce) can French-fried
onions
DIRECTIONS:
1. In a shallow dish, mix the olive oil, butter, lemon juice, dry mustard, salt, and pepper. Place the cubed halibut in the dish, and allow to marinate for 45 minutes in the refrigerator.
2. Preheat oven to 350 degrees F (175 degrees C).
3. Transfer the halibut and marinade mixture to a casserole dish. Spread the sour cream over the halibut, sprinkle with Parmesan cheese, and top with French fried onions.
4. Bake 15 minutes in the preheated oven, or until fish is easily flaked with a fork and marinade mixture is bubbly.

Capers and Halibut
Prep Time: 10 Minutes

"This is a very easy seared halibut with a buttery wine and caper sauce! It takes hardly any time at all to make, but it is sure to leave a lasting impression."
INGREDIENTS:
1 tablespoon olive oil
2 (8 ounce) steaks halibut
1/2 cup white wine
1 teaspoon chopped garlic
1/4 cup butter
salt and pepper to taste
3 tablespoons capers, with
liquid
DIRECTIONS:
1. Heat the olive oil in a large skillet over medium-high heat. Fry the halibut steaks on all sides until nicely browned. Remove from pan, and set aside.
2. Pour the wine into the pan, and use a spatula to scrape any browned bits from the bottom. Let the wine reduce to almost nothing, then stir in the garlic, butter and capers. Season with salt and pepper to taste. Let the sauce simmer for a minute to blend the flavors.
3. Return the steaks to the pan, and coat them with sauce. Cook until fish flakes easily with a fork. Serve fish immediately with the sauce from the pan poured over it.
