HONEYBITES
Ingredients
½ cup margarine, softened
½ cup brown sugar
½ cup honey
1 egg
1 ½ cups flour
½ tsp. baking soda
½ tsp. cinnamon
2 cups oatmeal
1 cup raisins
Directions
Preheat oven to 350°. Cream the margarine, brown sugar, honey and egg. Then add the flour , baking soda, cinnamon, oatmeal and raisins . I use my food processor to blend all the ingredients except for the raisins, which are stirred in by hand. Drop by spoonfuls on a cookie sheet. Bake 7-9 minutes, the edges of the cookies will brown and the surface will be shiny. Let cool on pan 1-2 minutes, then remove and cool on a wire rack. Makes approximately 3 dozen cookies, depending on size.
APPLE SALSA

A unique way to include apples at your Rosh Hashana meal
Ingredients:
2 red apples
2 T. lime juice
1/2 cup chopped orange segments
1/2 cup finely chopped onions
1/2 cup finely chopped green pepper
1 finely chopped jalapeno pepper (optional if this is too hot for your family)
1 clove garlic, minced
2 T. chopped fresh cilantro
1 T. cider vinegar
1/2 t. cumin
1 t. vegetable oil
Directions:
Core and dice apples into 1/4-inch pieces.
Toss immediately with lime juice.
Stir in remaining ingredients.
Chill 2 hours before serving. Delicious served with fish, chicken or turkey. Makes 3 cups.
ROSH HASHANAH HONEY BAKED APPLES
Ingredients:
1 large apple for each person
for each apple: - 1 Tablespoon honey
- 1 teaspoon margarine or butter
- 1/4 teaspoon each cinnamon and nutmeg
- Optional: 1 Tablespoon raisins
Preparation:
Core the apples and pare the skin off the top half of the apple. Fill the cored cavity with the listed ingredients.
Oven Baking: Place in an ungreased dish that has a 1/4 inch of water in it and bake at 375 degrees for 30-40 minutes, until fork tender. Spoon the syrup over the apples before serving.
Microwave: Prepare as directed, omitting the water from the baking pan. Place apples in a microwave safe casserole and microwave on high 5-10 minutes, rotating cups 1/2 turn every three minutes. Microwave until fork tender.
