Pumpkin Cheesecake Bars 1 pound cake mix 3 eggs 2 tbsp. butter, melted 4 tsp. pumpkin pie spice 1 pkg. (8 oz.) cream cheese, softened 1 can sweetened condensed milk 1 can (15 oz.) pumpkin 1/2 tsp. salt 1 cup chopped nuts
In large mixing bowl, on low speed, combine cake mix, 1 egg, butter and 2 tsp. pumpkin pie spice until crumbly. Press into bottom of a 15 x 10" jelly roll p beat in sweetened condensed milk, the remaining 2 eggs, pumpkin and remaining 2 tsp. pumpkin pie spice and salt. Mix well. Pour over crust in pan; sprinkle nuts over top. Bake for 30 to 35 minutes at 350º. Cool on wire rack and then chill. Cut into bars. Store in refrigerator. Makes 48 bars.
