BAKED MACARONI AND CHEESE 6 cups water 1 tablespoon plus 1 teaspoon salt divided use 2 cups elbow macaroni 1/4 cup plus 2 tablespoons butter softened 2 large eggs 2 cups evaporated milk 2 dashes Tabasco sauce 1 pound extra sharp cheddar cheese grated mixed with 1/2 cup grated American cheese 1/2 teaspoon paprika Preheat oven to 350. Put water and 1 tablespoon salt in a heavy saucepan and bring to a boil. Slowly stir in macaroni then boil 12 minutes stirring constantly. Pour macaroni in a colander and rinse with a little cold water then drain. Toss macaroni with butter and set aside. In small bowl beat eggs then add milk, remaining salt and Tabasco then set aside. In large buttered casserole alternate layers of cooked macaroni and cheese ending with cheeses. Pour egg mixture slowly and evenly over the macaroni and cheese then sprinkle with paprika. Bake 40 minutes until custard is set and top is bubbly and golden brown.
