Blueberry Black Walnut Bread

1/2 cup milk
1/2 cup vanilla yogurt
1 egg
2 tablespoons margarine or butter
3 cups bread flour
3/4 teaspoon salt
1 teaspoon active dry yeast or bread machine yeast
1/3 cup dried blueberries
1/3 cup chopped black walnuts

Select the loaf size. Add the ingredients to the machine according to the manufacturer's directions.

Select the basic white bread cycle.

NOTES : For the 1-1/2 pound loaf, the bread machine pan must have a capacity of 10 cups or more.

Lemon Breakfast Bread

1/2 cup milk
1/2 cup mashed cooked potato
1/3 cup water
1/4 cup margarine or butter -- cut up
1 egg
3 cups bread flour
1/4 cup sugar
1 teaspoon finely shredded lemon peel
3/4 teaspoon salt
1 teaspoon active dry yeast or bread machine yeast
Browned Butter Glaze:
1 tablespoon butter
1 cup sifted powdered sugar
1/2 teaspoon vanilla
1 tablespoon milk

Select the loaf size. Add all ingredients, except the Browned Butter Glaze, to machine according to the manufacturer's directions. Select the basic white bread cycle. Drizzle the cooled loaf with Browned Butter Glaze.

Browned Butter Glaze: In a small saucepan, heat butter until golden brown. Stir in powdered sugar and vanilla. Stir in enough milk to make a glaze of drizzling consistency. Use immediately (glaze will appear thin, but it sets up quickly when drizzled on loaf).

NOTES : For the 1-1/2 pound loaf, the bread machine pan must have a capacity of 10 cups or more.

To get 1/2 or 2/3 cup mashed potato, peel and cut up 1 medium to large potato. In a small saucepan cook potato in boiling water for 15 to 18 minutes or until tender. Drain. Mash with a potato masher; cool to room temperature. Measure the amount needed.

Apple Wheat Bread

1 package yeast

3 cups whole wheat flour

1/2 cup bran flake cereal

3 tablespoons gluten (optional)

1 teaspoon cinnamon

1 cup + 1 tbl. apple juice

1/2 cup applesauce, warmed

1 apple, grated with skin (1 1/4 c.)

Put all the ingredients into pan in the order listed, select wheat cycle and push start.

Bacon Beer Bread

3/4 cup flat beer

1/2 cup water

1/4 cup chopped green onions

2 tablespoons prepared mustard

1 tablespoon softened butter

3 1/4 cups bread flour

1 tablespoon sugar

3/4 teaspoon salt

1 3/4 teaspoons dry yeast

1/3 cup crumbled cooked bacon

Put in bread baking pan per manufacturer's directions and bake. Do not use the delay option for this recipe.

Apple Pie Bread

3 tablespoons brown sugar

1 teaspoon salt

1 cup buttermilk

1/4 cup apple juice concentrate

1 cup apple, chopped

1 1/2 teaspoons cinnamon

1/2 tablespoon gluten, wheat

3 1/2 cups bread flour

2 teaspoons active dry yeast

Combine all in bread machine, liquids first, then dry, gluten and yeast last. Process according to manufacturer's directions.

White Bread

2/3 cup water (70-80 degrees)

2 tablespoons white vinegar

1/2 cup sour cream

1 tablespoon sugar

1 1/2 teaspoons salt

3 cups bread flour

2 1/4 teaspoons active dry yeast

In bread machine pan, place all ingredients in order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available.

Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed).

Yield: 1 loaf (about 1-1/2 pounds)

Hamburger Buns

1 1/8 cups water

2 tablespoons butter

3 1/4 cups bread flour

3 teaspoons gluten (optional)

3 tablespoons dry milk powder

1 tablespoon sugar

1 1/2 teaspoons salt

3 teaspoons dry active yeast

Make sure all ingredients are at room temperature. If making by hand, add yeast to the water heated to about 110ºF. Allow to activate. Add foamy yeast solution to other ingredients and knead until dough is smooth and elastic, adjust water or flour to suit. If using an ABM for kneading dough, set ABM for dough cycle. When cycle has finished remove from pan. Punch down and let rise covered for 20 minutes Divide dough into 8 equal sections, make each section into a ball and place on lightly greased large baking sheet. Flatten each with palm of hand. Cover with cloth and let rise in warm place until doubled (about 1 to 1-1/2 hours). Bake in preheated 375ºF oven for 20 - 25 minutes until golden brown. Remove from baking sheet and let cool on cake rack. Makes 8.

Honey Bread

1 cup water

1 tablespoon oil

1/4 cup honey

1 teaspoon salt

1 cup oatmeal

2 cups bread flour

2 1/2 teaspoons yeast

Place wet ingredients into machine, then dry, then yeast on top. Process.

1 cup All purpose flour

1 cup Whole wheat flour

Bananas and Cream Bread

2 teaspoons active dry yeast

3 cups bread flour

3 tablespoons wheat germ

3 tablespoons powdered milk

3/4 teaspoon nutmeg

1 1/2 tablespoons oil

1 cup mashed bananas

2 tablespoons mashed bananas

3/4 cup sour cream or plain yogurt

Add all ingredient except the raisins or nuts and bake on raisin bread cycle. At the beeper add the raisins or nuts.

Babka

2 1/2 teaspoons active dry yeast
3 1/2 cups flour
1/2 teaspoon salt
2 tablespoons sugar
2 tablespoons butter
1 cup + 2 tbl. milk
2 large eggs
1/2 teaspoon vanilla

CHOCOLATE FILLING:
1/4 cup unsweetened cocoa
1/2 cup sugar
1/4 cup melted unsalted butter
1/3 cup coarsely chopped pecans
TOPPING:
1 tablespoon butter, softened
2 tablespoons sugar
2 tablespoons flour
2 pinches cinnamon
EGG WASH:
1 large egg beaten with 1 tsp. water

All ingredients must be at room temperature. Add ingredients in the order specified in your owner's manual. Set machine to dough/manual setting. At the end of the cycle, press clear/stop. To punch down dough, press start and let knead for 60 seconds. Press clear/stop again. Remove dough and let rest 5 minutes before hand-shaping.

Hand Shaping Technique: While the dough is rising, prepare the filling by blending ingredients together with a fork until crumbly. To make crumb topping, blend ingredients together with a fork until crumbly. Chill both until ready to use. Lightly grease a 4-1/2x8-1/2 inch loaf pan. On a lightly floured work surface, roll the dough into a 10x20 inch rectangle. Cover with filling up to 1 inch from the edges. Roll up lengthwise, jelly roll fashion. Pinch seam and ends securely together so that they don't open during baking. Carefully place babka in prepared pan. Fold ends under and shape into an S so that it fits into pan. Cover with a clean kitchen cloth and let rise until doubled in size.

Preheat oven to 350 ºF. Form a crease in the top of the risen babka with the side of your hand. Brush with egg wash and cover with crumb topping. Bake approximately 30-35 minutes, or until golden brown. If babka begins to brown too quickly, cover top with foil. Remove from pan and cool on wire rack.

VARIATIONS:

Cheese Babka Filling
8 oz. farmer cheese
2 Tablespoons sugar
1 tablespoon flour
1 large egg yolk
2 teaspoons grated orange zest
1/4 cup raisins
Blend together all ingredients except the raisins. After spreading the cheese filling on the babka, sprinkle with the raisins.

Cinnamon Sugar Babka Filling:
2 Tablespoons unsalted butter, softened
1/4 cup sugar
1 teaspoon ground cinnamon

Bountiful Blueberry Bread

Makes a 2 pound loaf

1 cup plus 2 tablespoons water

1 egg

1/2 cup blueberry preserves

4 cups bread flour

3 tablespoons dry milk

1 1/4 teaspoons salt

1 teaspoon bread machine yeast

1/3 cup dried blueberries

Measure carefully, placing all ingredients except dried blueberries in bread machine pan in the order recommended by the manufacturer.

Select Sweet or Basic/White cycle. Use Medium or Light crust color. Do not use the delay cycle.

Add dried blueberries at the beep signal or 5 minutes before the last kneading cycle ends.

Hawaiian Sweet Bread

3 teaspoons dry yeast

5 tablespoons sugar

3 cups bread flour

3/4 teaspoon salt

2 tablespoons dry milk

2 tablespoons instant potato flakes

1/4 teaspoon lemon extract

1/4 teaspoon vanilla extract

2 eggs

4 tablespoons butter

1 cup warm water

Put in bread machine, first wet ingredients, then dry, then yeast. Process on light crust cycle.
