ABM Walnut Oatmeal Bread

1/4 cup chopped walnuts
1/4 cup oatmeal
2 1/4 teaspoons dry yeast
1 tablespoon malt sugar
1 teaspoon salt
3 tablespoons gluten
3/4 cup organic white bread flour
3/4 cup fine ground organic whole wheat flour
1 1/2 cups freshly ground organic wheat berries, about the consistency of fine corn meal
9 ounces warm water

Place all in hopper of a bread machine, set to manual and process until ready to form loaves. Or mix and knead by hand, allow to rise one hour, punch down and knead again. Preheat oven to 300F, preferably with a baking stone inside. Form a single round loaf and allow to rise for 75 minutes. Brush with cold water and sprinkle oatmeal flakes on top. Bake for 50 minutes at 300F, then increase heat to 375F and bake ten minutes longer. These temperatures are for a convection oven; adjust as necessary. Adjust water or add bread flour, to make a stiff dough during first kneading.

MAPLE OATMEAL BREAD
3/4 cup plus 2 Tbsp. warm water
1 Tbsp. oil(any kind)
1/3 cup maple syrup
3/4 cup quick cooking oatmeal
1 tsp. salt
1 pkg dry yeast( I use fast rising yeast)
2-1/2 cups bread flour

Put warm water in breadmachine pan first to warm pan up (makes better bread this way). Pour warm water out and put in warm water from recipe above. Add yeast and let proof for five minutes (proof means just let it sit til it bubbles). Add remaining ingredients. Use Basic Bread Machine setting and crust color of your choice. Makes 1-1/2 pound loaf.

NOTE: All breadmachine recipes say add yeast last but I've found if you add yeast first to whatever warm liquid you use and let it proof for five minutes your bread turns out better.

Don't get alarmed if yeast doesn't bubble after 5 minutes. Some yeasts do and some don't - just proceed with directions

Maple Oatmeal Bread

3 teaspoons yeast
1 1/3 cups oats
4 cups flour
1 1/2 teaspoons salt
7 teaspoons maple syrup
4 teaspoons oil
1 1/2 cups water

Put in pan according to machine manual. Set for regular loaf. Makes 2 lb. loaf.

"Quite tasty ..."

INGREDIENTS:

1 cup buttermilk

1 egg

1/4 cup warm water (110

degrees F/45 degrees C)

2 tablespoons honey

1 1/2 cups whole wheat flour

1 1/2 cups all-purpose flour

1/2 cup quick cooking oats

2 tablespoons vegetable oil

1 1/2 teaspoons salt

1 1/2 teaspoons active dry yeast



DIRECTIONS:

1. Place ingredients into the bread machine in order suggested by the

manufacturer.

2. Use the Light Crust or Whole Wheat settings. Start the machine.

1/2 cup quick cooking oats

2 tablespoons margarine

1 tablespoon active dry yeast



DIRECTIONS:

1. Place ingredients in the pan of the bread machine in the order

recommended by the manufacturer. Select White Bread setting, and Start.
