Rice Bread

1/2 tablespoon yeast
2 1/4 cups bread flour
1 tablespoon sugar
1/2 tablespoon salt
1 tablespoon oil
1 cup cooked rice
1 cup water

Bring all ingredients to room temperature and pour into bakery, in
order.  Select "white bread" and push Start.  For a richer bread,
use 1 egg and 3/4 c water instead of 1 c water. In hot, humid
weather, use 1/8 c less water.  The dough will look a little wet.
do not add extra flour.

RICE BREAD (for bread machine)

3 tsp yeast
1 1/4 cup warm water
2 tsp sugar
1 1/2 tsp salt
2 Tbsp oil
3 Tbsp non-fat milk powder
1 cup wholemeal flour
2 cup white flour
1 cup cooked rice

Put in ingredients in the order recommended by manufacturer. Because
the amount of water in the rice may vary, try adding 1 cup water
plus 2 Tbsp initially, adding 2 Tbsp extra if the dough is too dry.
This is a good timer bread once you have worked out the amount of
water needed for your machine.

Dilled Brown Rice Bread

1/12 Pound loaf

1 cup water
2 tablespoons vegetable oil
2 tablespoons packed brown sugar
2 1/4 cups bread flour
3/4 cup wheat flour
3/4 cup cooked brown rice
1 tablespoon chopped fresh or 3/4 teaspoon dried dill weed
3 tablespoons dry milk
1 1/2 teaspoons salt
1 1/2 teaspoons Yeast


2 Pound loaf

1 1/3 cups water
2 tablespoons vegetable oil
2 tablespoons packed brown sugar
3 1/4 cups bread flour
1 cup wheat flour
1 cup cooked brown rice
1 tablespoon plus 1 1/2 teaspoons chopped fresh dill or 1 1/2 teaspoon dried
3 tablespoons dry milk
1 1/2 teaspoons salt
1 1/4 teaspoons yeast

Measure carefully, placing all ingredients in bread machine pan in
the order recommended by the manufacturer.

Select Whole Wheat or Basic/White cycle. Use medium or light crust
color. Do not use delay cycles. Remove baked bread from pan and
cool on a wire rack.

Carolina Rice Bread


2 1/4 teaspoons yeast
3 cups bread flour
1 1/2 teaspoons salt
1 tablespoon sugar
2 tablespoons nonfat dry milk powder
1 tablespoon unsalted butter
3/4 cup cooked rice
3/4 cup water
1 large egg
1 teaspoon lemon juice

Use basic cycle. Do not use timer.

SWEET POTATO RAISIN BREAD

3 c bread flour
4 tbsp rolled oats
1/2 tsp ground cinnamon
2 pinches nutmeg
1 1/2 tsp salt
2 tbsp dark brown sugar
2 tsp yeast
3 tbsp non fat dry milk: optional
3 tbsp margarine or butter
3/4 c  mashed sweet potatoes
1/2 - 3/4 c  water

When your machine says it is time to add stuff or 5 or 10 minutes
before second kneading is complete, add: 3 tbsp dark raisins and
1/3 c pecans.

  • 2 tablespoons butter
  • 1/3 cup dark brown sugar
  • 1 1/2 teaspoons salt
  • 2 teaspoons active dry yeast
  • 2 tablespoons dry milk
Add ingredients according to manufacturer's suggested order. Use white bread setting, light crust.
Makes a 2-pound loaf.

Sweet Potato Quick Bread

For bread machines with a cake cycle.
  • 1/2 cup shortening
  • 1 1/4 cups sugar
  • 2 eggs, lightly beaten
  • 1 teaspoon vanilla
  • 1/4 cup buttermilk or soured milk
  • 1 cup mashed sweet potatoes
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 3/4 teaspoon salt
  • 1/2 to 1 cup pecans and/or raisins, optional
Select cake setting. Put shortening and sugar into the bread pan and let mix until well blended. Add eggs, vanilla, milk and sweet potatoes; let mix for another minute. Sift together flour, soda, baking powder and salt; add to the pan. Add pecans and/or raisins at the beep, if desired. When finished, remove carefully to a rack. Glaze, frost, or serve with whipped cream.

Sweet Potato Orange Raisin Bread
Makes 1/2 Pound Loaf

1 cup orange juice
1 1/2 tablespoons vegetable oil
1/2 cup mashed sweet potato
3 cups wheat flour
3/4 teaspoon salt
1 1/2 teaspoons yeast

Put everything except the raisins and cinnamon in the machine's bread pan, use the Sweet Bread setting. Add the raisins and cinnamon when machine beeps.

At beep add:

3/4 teaspoon cinnamon
3/4 cup golden raisins

Savory Sweet Potato Bread

1 cup [extra large: 1 1/3 cups] mashed, canned sweet potatoes or yams (drained, reserve liquid)
1/2 cup [extra large: 3/4 cup] reserved liquid from sweet potatoes or yams
2 tbsp [extra large: 3 tbsp] vegetable oil, margarine or butter
3/4 tsp [extra large: 1 tsp] salt
1 tbsp [extra large: 2 tbsp] sugar
3 cups [extra large: 4 cups] white flour(*)
1/4 tsp [extra large: 1/2 tsp] pepper, nutmeg or dried chili peppers
flour)

1. Add all ingredients to machine according to manufacturer's directions.

Select basic white cycle.

VARIATION: Clover Leaf Rolls Select dough cycle. When cycle is complete, remove dough to lightly floured surface, cover, and let rest for 5 to 10 minutes.

Cut dough into 12 or 16 pieces; shape each into a smooth ball and place in greased muffin tins. Cover with clean tea towel and let rise in warm place for about 30 minutes or until double in size.

Bake at 375 deg F for 10 to 12 minutes or until golden brown. Remove rolls from pans and serve warm or leave to cool on racks.

Add to pan. Use basic cycle on ABM or make by hand.

Sour Cream Onion Bread

3 cups whole wheat flour
2 tablespoons granulated sugar
1 teaspoon salt
2 tablespoons wheat germ (optional)
2 teaspoons active dry yeast
1 (1 ounce) package dry onion soup mix
1 cup sour cream
1/2 cup water

Place flour, sugar, salt, wheat germ, yeast, dried soup, sour cream, and water in the pan of the bread machine in the order recommended by the manufacturer. Select the dough cycle, and press start. Shape dough, and place in a greased loaf pan. Place in a warm spot, and allow to rise until doubled in size. Bake in a preheated 350 degree F (175 degree C) oven for 30 minutes. Cool.

Hawaiian Potato Bread

3 cups all purpose flour
1 tsp. salt
1 pkg yeast
1/2 cup pineapple juice
3/4 cup water
2 tablespoons butter
1 egg
1 cup mashed potato flakes

Let the machine go thru a dough cycle, then form dough into a ball..

Place in greased round cake pan.  Cover, let rise until doubled
(30 - 45 min) Heat oven to 350F.  Uncover dough, bake for 35-45
min, or until loaf has a hollow sound when lightly tapped.

Immediately remove from pan by loosening sides and place on rack
to cool.  Makes a 24 slice round loaf.

Corn Fritter Bread Machine Bread

1/3 c. water
3 c. bread flour
3 T. dry milk
1 1/2 tsp. salt
1/4 c. butter
1/4 c. honey
3/4 c. canned drained corn (drained well)
1/4 c. sour cream
2 T. dried chopped chives
2 tsp. active dry yeast

Put in bread machine in order that is suggested by your bread machine.

Dough will not be as firm in the kneading process as you are used to. Relax, it will rise to the occasion.

Use rapid or regular bake cycle.

Makes large loaf.

Great with chili!

1/3 cup snipped dried tomatoes (oil-packed)

4 teaspoons olive oil or cooking oil

4 cups bread flour

1/3 cup cooked bacon pieces

4 teaspoons sugar

1 teaspoon salt

1 teaspoon dried basil, crushed

1 teaspoon active dry yeast or bread machine yeast



Directions:

Select the loaf size. Add the ingredients to the machine according to

manufacturer's directions. Select the basic white bread cycle.
