Hawaiian Coconut Bread----------Betty B.

Ingredients:
--------- FOR 1 ---------
1 pk Yeast
3 c Bread flour
2 ts Salt
1 tb Sugar
1/4 c Nonfat dry milk powder
1 Egg
1/4 c Soft butter
3/4 c Coconut; shredded
3/4 c Macadamia nuts (whole is
-fine or use almonds)
1/2 c Crushed pineapple; well
-drained
1/2 c Pineapple juice from above
1/4 c Warm water
--------- FOR 1 ---------

Instructions:
Drain the pineapple, reserve liquid.
Add all ingredients in the order listed above, pineapple and juice "last".
Select white bread and push start.

Hawaiian Bread Recipe

This is a bread machine recipe using lemon and vanilla extract. (you could let the machine mix the dough then make it into rolls adding the butter in the tins)

1 1/2 teaspoons active dry yeast
5 tablespoons sugar
3 cups bread flour
1/2 teaspoon salt
2 tablespoons dry milk
2 tablespoons instant mashed potato flakes
1/4 teaspoon lemon extract
1/4 teaspoon vanilla extract
2 eggs
1/4 cup butter (4 ounces)
1 cup warm water

Place in machine as directed, using light setting. Makes a 1 1/2-pound loaf.

Lemon Loaf

1 cup water
1 1/2 teaspoons salt
1 1/2 teaspoons canola oil
1/3 cup semolina flour
2 2/3 cups bread flour
2 tablespoons nonfat dry milk
2 tablespoons sugar
2 teaspoons lemon peel
1/4 teaspoon lemon extract
1/4 teaspoon cardamom or cinnamon
2 teaspoons yeast

Place all ingredients into bread machine in order given.  Bake on
rapid cycle with light crust setting.

Lemon Bread

1 package yeast
3 cups bread flour

1/2 teaspoon salt
1/4 cup butter, room temperature
3/4 cup scalded milk
1 egg + 1 yolk, room temperature
1/4 teaspoon lemon extract
2 teaspoons grated lemon rind

Place all ingredients into breadmaker pan in the order above, select white bread and push start.

Aloha Bread

1 1/2 Pound loaf

8 ounces can crushed pineapple in juice, drained, juice reserved
1/3 cup water
1/4 cup reserved pineapple juice
1 tablespoon margarine or butter, softened
3 cups bread flour
1/2 cup shredded coconut, toasted
1/3 cup pecan or walnut halves
1 tablespoon dry milk
1 tablespoon packed brown sugar
1 teaspoon salt
1 1/2 teaspoons yeast


2 Pound loaf

8 ounces can crushed pineapple in juice, drained, juice reserved
1/2 cup water
1/4 cup reserved pineapple juice
1 tablespoon margarine or butter, softened
4 cups bread flour
2/3 cup shredded coconut, toasted
1/2 cup pecan or walnut halves
1 tablespoon dry milk
1 tablespoon plus 1 teaspoon packed brown sugar
1 1/2 teaspoon salt
1 3/4 teaspoons yeast

Measure carefully, placing all ingredients in bread machine pan in
the order recommended by the manufacturer.

Select Sweet or Basic/White cycle.  Use medium or light crust
color.  Do not use delay cycle.  Remove baked bread from pan and
cool on a wire rack.

      1/3 cups canned pineapple chunks, drained, reserving juice
      3 tablespoons buttermilk
      2 tablespoons reserved pineapple juice
      1 egg
      1/3 cup sliced very ripe banana
      2 cups flour
      3 tablespoons whole wheat flour
      1 teaspoon salt
      3 tablespoons butter
      1 tablespoons sugar
      1/3 cup shredded coconut (frozen, thawed, is best)
      1/4 cup chopped macadamia nuts
      1 1/2 teaspoon active dry yeast
 
 Put all ingredients into bread machine or follow your user's manual.
Select correct bread cycle and crust color, then press start.

Apricot Bread - Genie 
 
1 pkg active dry yeast
3 c bread flour
3 tbsp brown sugar
1 tsp salt
1 tbsp butter, softened
1 c dried apricots, cut in quarters
1 1/4 c orange juice

Add ingredients in order given.  Setting: white bread.

Grape-Raison Bread

This bread makes a fantastic peanut butter sandwich. It is also great toasted for breakfast. It makes a medium size loaf, about 1-1/2 lbs.

Grape Juice 1 cup
Butter 1-1/2 tbs.
Sugar 2-1/2 tbs.
Salt 3/4 tsp.
Whole Wheat Flour 3/4 cup
Bread Flour 2-1/4 cups
Yeast 2-1/4 (one pkg)
or 1-1/2 tsp. bread machine yeast
Note: Use basic setting.

  • Variation on Grape-Raison Bread:

    This is a great bread if you grow your own grapes as this variation uses grape pulp as well as the juice. It makes a dense, moist and flavorful loaf.

    Grape Juice 1/2 cup
    Grape Pulp 1/2 cup
    Egg 1
    Butter 1-1/2 tbs.
    Baking Soda 1/3 tsp.
    Sugar 2 tbs.
    Salt 1/2 tsp.
    Bread Flour 2-1/2 cups
    Yeast 2-1/4 (one pkg)
    or 1-1/2 tsp. bread machine yeast
    Note: Use basic setting. As puree contains varying amounts of liquid, you may have to adjust the amount of flour in this recipe. Experiment the first time and note any adjustments.

    Spiced Date Bread

    • 1 1/4 cups water
    • 2 tablespoons butter
    • 4 cups bread flour
    • 1/4 cup packed or granulated brown sugar (light or dark)
    • 2 tablespoons wheat germ, optional
    • 1/2 teaspoon ground cinnamon
    • 1 1/2 teaspon salt
    • 2 teaspoons yeast
    • 1/2 cup finely chopped dates, soaked in hot water then drained
    Add ingredients (except dates) according to your manufacturer's suggested order; set on light crust; add drained dates at the beep.
     
    Note: You may substitute raisins for dates in this recipe if you wish.

    1. Place ingredients in bread pan in the order given by manufacturer of bread machine. Add the dates and nuts at beep.
    2. Select sweet or basic setting; press start.

    Makes 1 1/2 pound loaf.

    1/2 tablespoon apple sauce

    2 tablespoons apricot jam

    1/2 cup apricots, dried chopped

    2 teaspoons yeast



    Directions:



    Add ingredients to your bread maker and bake on regular cycle.



    Follow the instructions that came with your bread maker for order of

    the ingredients.

    1/3 C. diced carrots, cooked and pureed

    1/3 C. canned pumpkin or diced banana squash, cooked and pureed

    1/3 C. unsweetened applesauce

    1 T. honey

    1 T. butter or margarine

    1 C. bread flour

    1 C. whole-wheat flour

    1 t. salt

    1/4 t. ground allspice

    2 t. active dry yeast

    Place all ingredients in bread pan, select light crust setting and press start. After the baking cycle ends, remove bread from pan, place on cake rack and allow to cool 1 hour before slicing.

    Caramel Apple Pecan Bread

    1 cup water

    3 cups Gold Medal Better for Bread bread flour
    1/4 cup packed brown sugar
    3/4 teaspoon ground cinnamon

    2 teaspoon bread machine or quick active dry yeast
    1/2 cup chopped unpeeled apple
    1/3 cup coarsely chopped pecans, toasted

    Measure carefully, placing all ingredients except apple and pecans in bread machine pan in the order recommended by the manufacturer. Add apple and pecans at the Raisin/Nut signal or 5 to 10 minutes before last kneading cycle ends. Select Sweet or Basic/White cycle. Use Light crust color. Do not use delay cycle. Remove baked bread from pan and cool on wire rack.
