Light Rye Bread

1 1/2 pound loaf



This is a great tasting caraway rye bread and it makes wonderful toast. I

used the dough cycle and then baked this in a 350° oven for 30 to 35

minutes. I didn't use the whey and I added about 1 tablespoon more caraway

seed. I like caraway. This was posted on another group by John Ross.



Ingredients:



1 cup plus 2 tablespoons water

2 1/4 tablespoons honey

1 1/2 tablespoons canola oil

1 1/4 teaspoons salt

1 1/4 cups whole wheat flour

1 cup unbleached flour

3/4 cup rye flour

3 tablespoons vital wheat gluten, optional

1 tablespoon cornmeal

1 tablespoon caraway seed, or more

1 1/2 tablespoons whey, optional

2 teaspoons active dry yeast



Place all ingredients in your machines fully assembled pan in the order

specified by manufacturer. Select the Basic or White cycle and press start.

After the first 10 minutes of kneading check the dough and make any

necessary adjustments.

German Rye Bread

1 tablespoon active dry yeast
1 tablespoon caraway seeds
2 1/4 cups bread flour
1 1/2 teaspoons salt
2 1/2 tablespoons unsweetened cocoa
1 1/2 cups rye flour
1 1/4 cups warm water
1 1/2 tablespoons butter
2 1/2 tablespoons molasses

Place all in bread machine, wet ingredients, the dry, lastly yeast. Put on rye bread cycle and start.

Rye Cornbread
     
1/2 tb yeast
3 c bread flour
3/4 c rye flour
3/4 c corn meal
1 1/2 ts salt
1/2 c honey
1 eggs
1 1/4 cup warm water

Bring all ingredients to room temperature and pour into bakery, in
order. Set "baking control" at eleven o'clock. Select "white bread"
and push Start.
