Gingerbread Loaf--sonja

3/4 c milk
1/4 c molasses
1 egg
3 tbs butter
3 1/3 c bread flour
1 tbs brown sugar
3/4 tsp salt
3/4 tsp cinnamon
3/4 tsp ginger
1 packet active dry yeast


Place all ingredients in pan according to machine directions and push
start.


Optional: Lemon Icing: In small mixing bowl stir 1/2 cup sifted
powdered
sugar, 1/4 teaspoon vanilla, 1 teaspoon lemon juice and enough milk
(1-3
teaspoons) to make an icing of drizzling consistency.

Almond Poppyseed Bread

1 1/4 cups buttermilk
1 1/2 tablespoons almond extract
3 tablespoons honey or maple syrup
1/3 teaspoon salt
1 1/2 tablespoons poppy seeds
1/2 teaspoon baking soda
1 1/2 tablespoons gluten (optional)
3 1/2 cups whole wheat flour
1 1/2 teaspoons yeast
1/2 cup almonds, chopped

Place ingredients in order given by manufacturer. Add nuts at beep. Medium crust setting. Makes 1-1/2 lb loaf.

  1. Place all dough ingredients in bread machine pan in order according to manufacturer. Choose dough setting. When dough is ready, take out and punch down.
  2. Cut into 3 equal pieces. On a lightly floured surface, roll each piece into a rope about 20-inches long. On a greased baking sheet, braid the ropes, tucking ends under. Cover and set in warm place to rise until doubled.
  3. Brush dough with egg wash. Sprinkle with almonds and then with sugar.
  4. Bake in preheated 375*F (190*C) oven for about 35 minutes or until golden brown. Cool on wire rack.

Makes 1 loaf.

Cinnabons for the Bread Machine    

Ingredients:
These are sweet, rich and oooh sooo good!
This recipe uses a bread machine.
2 pounds.

Ingredients
1 c. milk
1 egg, beaten
4 Tbsp. melted butter
4 Tbsp. water
1/2 box instant vanilla pudding (3.4 oz. box)
4 c. bread flour
1 T. sugar
1/2 t. salt
2-1/2 t. bread machine yeast

Filling 
1/2 c. butter, softened
1 c. brown sugar
2 t. cinnamon
1/4 c. chopped walnuts, opt
1/4 c. raisins, opt.

Frosting 1      (Real Cinnabon Frosting)
4 oz. cream cheese, room temp.   (with walnuts and raisins)
1/4 c. butter, softened 
1-1/2 c. powdered sugar
1/2 t. vanilla  
1-1/2 tsp. milk
3 T. real maple syrup

Frosting 2   (not the real thing, but good)
1 t. milk
1-1/2 c. powdered sugar
4 T. butter, softened
1 t. vanilla
1-1/2 T. milk

Preparation Instructions:
Place all ingredients in your machine in order
recommended by your machine's manufacturer. Place
the pan in your machine. Select the dough cycle and
press start. When cycle is finished, remove the dough,
knead enough to punch down and roll to 17X10. Combine
first three filling ingredients and mix well. Heat in
microwave 10 sec. to make it spreadable. Spread over
rolled out dough with rubber spatula. Get as close
to the edges as possible. Sprinkle nuts or raisins over
dough. Starting with widest end, roll the dough into
tight log. Cut into 1/2-1" slices. Place in a
lightly greased baking dish with sides. Put in warm draft
free place and allow them to raise until double. (I turn
my oven on warm and place them inside. When the temp.
light goes off, turn off the oven. I let them rise
20-30 minutes this way. Take out to heat oven to
baking temp.) Bake at 350 for 15-20 minutes. When
the rolls are done top with frosting of your choice.
Note:
For a real treat replace raisins in the filling with
chopped dried cherries, blueberries or strawberries.
when doing this use frosting 1 or 2 and add a Tbsp.
of matching fruit jam.
Yield: A full 9x13 pan.

SOUR CREAM POPPY SEED BREAD

1 lb. loaf

1/3 cup sour cream
3 T water
1 large egg
1 T butter, cut up
3/4 t salt

1 t poppy seeds
1 1/2 t yeast


1.5 lb. loaf

1/2 cup sour cream
1/2 cup water

Herb Bread for Breadmakers
 
1 1/2 cup water
2 cloves garlic chopped or sliced
1/2 cup onion chopped
1 1/2 cups flour (can be bread flour)
1 3/4 cups whole wheat flour
1 T sugar or honey
1 1/2 teaspoon salt ( i use kosher or sea)
1 T basil (i use dried)
1 T tarragon
1 T thyme
1 T rosemary
make a dip in the flour and add 1 1/2 teaspoons of yeast ( i use breadmachine yeast for this or regular).
 
sometimes I add cheese to this too, i like sharp cheddar!!!
 
Add in order and start breadmaker on regular bread.
(Mine takes about 3 hours to make)

Lightly spoon bread flour into dry measuring cups; level with a
knife. Follow the manufacturer's instructions for placing flour and

Yield: 1 (1 1/2-pound) loaf, 16 servings

Bread Machine Fresh Herb Bread
When store-bought loaves just won't do, you can put this fragrant bread
together in a snap!

1 cup plus 2 tablespoons water
2 tablespoons butter or margarine, softened
3 cups Gold Medal® Better for BreadT bread flour
2 teaspoons chopped fresh sage leaves
1 tablespoon chopped fresh basil leaves
1 tablespoon chopped fresh oregano leaves
2 teaspoons chopped fresh thyme leaves
1/4 cup chopped fresh parsley
3 tablespoons dry milk
2 tablespoons sugar
1 teaspoon salt
1 1/2 teaspoons bread machine yeast

1.
Measure carefully, placing all ingredients in bread machine pan in the order
recommended by the manufacturer.
2.
Select Basic/White cycle. Use Medium or Light crust color. Remove baked
bread from pan and cool on wire rack.

Tips from the Kitchen

Success
Bread machines with a bread pan capacity of 9 cups or larger work best for
this recipe.

Garden Herb Bread

3/4 cup water
2 cups white bread flour
1 tablespoon dry milk
1 tablespoon sugar
1 teaspoon salt
1 tablespoon butter
1 teaspoon chives
1 teaspoon marjoram
1 teaspoon thyme
1/2 teaspoon basil
2 teaspoons active dry yeast or 1 tsp. fast rise yeast

Follow the directions for your bread machine. Use dried herbs that are flaked and not ground. If using ground, reduce amount by half. If using fresh herbs, double the amount. Any combination of spices may be substituted, according to your tastes.

1 t Dried oregano

2 tb Water
2 tb Skim milk
2 tb Pesto sauce
2 ts Olive oil

Follow manufacturer's instructions for placing flour and remaining ingredients into the bread pan. Select the European bake cycle, and start the bread machine. Yield: one 1/12 pound loaf, 16 servings.

You can also use sour cream instead of the yogurt for a bit of a
different taste. Load as directed for your bread machine.

Seed and Nut Crusted Greek Bread
Process the whole way on your Dough cycle, in the order given for your
machine:

3/4 c. water
1 egg
2 T. butter or margarine (cut up)
1 T. honey
1 1/4 tsp. salt
2-1/2 c. bread flour
1/2 c. dry milk powder
2-1/2 tsp. bread machine yeast

At the end of cycle, knead 16-20 times on a lightly floured board; pat
into a ball, cover with the bread pan, and rest 5 minutes. Flatten the
top just a little bit, smooth into a round, and put on a parchment
covered baking sheet. Spray wax paper with a little cooking spray
(like Pam), cover the bread with it, and let rise tilll almost double,
20 - 35 minutes.,in a warm place.

Then:
turn oven on to 350 and mix:
1 egg, wisked till it foams
3 T. grated Parmesan (if fresh, if canned, 1 1/2 T.)
1/4 c. chopped walnuts
1/8 c. chopped pecans
1 T. sesame seeds
1 rounded tsp. fennel seeds
1/4 tsp. ground ginger

Spoon this over top of dough, allowing it to run down at intervals
around the sides. With scissors or a lame', cut a cross in the top.
Bake 28 - 32 minutes, till a deep golden brown; spray with water as
you put into oven, or toss in 3 or 4 ice cubes. If you spray, spray
once more in about 2 minutes. You sure don't have to do this, but it
produces a great crust for very little effort! Pick up, still on
parchment, and move to a rack to cool.
When you wrap it in plastic the crust softens, but it does keep well
for 4 days, which makes it a nice bake sale bread.

Irish Barmbrack Bread - Genie

1 1/8 cup water
3 c bread flour
3 ts gluten
1 1/2 ts salt
3 tb sugar
3/4 ts dried lemon peel
3/4 ts ground allspice
1 1/2 tb butter
2 tb dry milk
2 ts active dry yeast
3/4 c raisins

Put all ingredients in bread pan in order of manufacturer directions.

This makes a dense medium size loaf (6-7 inches tall). For a fluffier
taller loaf, increase yeast to 2 1/2 teaspoons.

Have ingredients at room temperature. If necessary, warm water and
butter in microwave for 50-60 seconds on high.

Add 1/4 cup raisins 4 minutes into first cycle.
Add remaining raisins just after resting period and as second
kneading begins.

Crust color: medium Bread Cycle: Bread or Mix Bread

2 cups white flour

1 cup whole wheat flour

1/4 cup ground flax seed

2 tablespoons sesame seeds

1 tablespoon poppy seeds

2 teaspoons yeast, active dry





Directions:



Add ingredients to bread bin/pan in order of list or as

manufacturer suggests.



Select "white/powdered milk" or regular cycle.

Recipe for bread machine.

Bavarian Sugar Coffeecake

Dough:
1/2 cup whole milk
1/2 cup water
1 large egg
1
teaspoon almond extract
1/4 cup (1/2 stick) unsalted butter
1/3 cup granulated sugar
1 1/2 teaspoons salt
3 cups unbleached all-purpose flour
4 teaspoons active dry yeast
Glaze:
1/3 cup granulated sugar
1 teaspoon ground cinnamon
1 cup heavy cream
  1. Place all of the dough ingredients into the pan of your bread machine, program the machine for the dough or manual cycle, and press start.
  2. When the machine has completed its cycle, remove the dough and turn it out onto a lightly floured work surface.
  3. Press the dough into a greased 13 x 9 x 2-inch baking pan, using your fingers, stretch it to cover the bottom of the pan. Cover the pan with plastic wrap, and allow the dough to rise until it's doubled in bulk, 30 to 45 minutes.
  4. With two fingers, punch deep holes all over the dough.
  5. In a small bowl, combine the sugar and cinnamon; sprinkle it over the dough. Drizzle the cream evenly on top.
  6. Bake the cake in a preheated 350*F (175*C) oven for 25 to 30 minutes, or until a wooden pick inserted in the center comes out clean. Remove the cake from the oven, and serve it warm from the pan.

Makes 12 servings.
