Hamburger Buns (using ABM to mix dough)
1 cup water 2 tbsp. butter 2 tbsp. sugar 2 tsp. salt 3 cups bread flour 3 tbsp. dry milk 1 1/2 tsp. bread machine yeast
Place all ingredients in your machine in the order recommended by your machine's manufacturer. Select the Dough cycle and press start. When cycle is complete, remove dough from machine to a lightly floured surface. If necessary, knead in enough flour to make dough easy to handle. If dough is too elastic, cover and let rest 10 minutes before shaping.
Divide dough into 9 equal pieces. Form each piece into a smooth ball. Place on large greased baking sheet. Flatten balls into 4-in. rounds; cover. Let rise in warm, draft-free place until doubled in size, 20 to 30 minutes. Lightly beat egg white and 1 tbsp. water. Brush on buns. Sprinkle with sesame seed. Bake at 375ºF. for 12 to 15 minutes or until done.
