ABM 100% Whole Wheat Bread

For 1 1/2 lb. bread machine
1 1/4 cups water
2 tablespoons olive or vegetable oil
1/4 cup honey or maple syrup
3 cups King Arthur 100% White Whole Wheat or (3 to 3 1/2 ) Stone-Ground Whole Wheat Flour
1/4 cup sunflower sesame or flax seeds, or a combination (optional)
1 tablespoon vital wheat gluten
1 1/2 teaspoons salt
1 1/2 teaspoons instant yeast

Put all of the ingredients into the bread pan in the order listed.
Program for basic white bread, and press Start.

Honey Banana Whole Wheat Bread (ABM)
Makes 2 lb loaf

2/3 cup warm water
1 1/2 Tbl. butter or veg oil
1/4 cup honey
1 egg
1/2 tsp. vanilla
1 1/2 cup whole wheat flour
1/12 cup bread flour
1 banana, sliced
2 tsp. poppy seeds
1 tsp. salt
2 tsp. dry yeast

Add all ingredients to bread pan in order recommended for your machine. Select the Basic/White cycle and press start.

French Wheat Bread (AMB)

1 1/8 cups water
2 1/2 cups bread flour
1/2 cup whole wheat flour
2 1/4 tsp. sugar
1 1/2 tsp. salt
1 1/2 tbsp. butter
3 tsp. active dry yeast

Place the ingredients in the bread pan in the order recommended by your machine's manufacturer. Process on the appropriate cycle.

This recipe yields a 1 1/2 pound loaf.

Buttermilk Honey Wheat Bread (ABM)
1 1/2 lb loaf

1/2 T. yeast
1/4 c dry buttermilk powder
1 1/2 c bread flour
1 1/2 c whole wheat flour
1 1/2 t salt
1 1/2 T canola oil
3 T honey
1 c + 2 T water

Place all the ingredients in the pan in order recommended for your machine.

Use whole wheat cycle. Delayed timer okay.

Apple Wheat Bread

1 package yeast
3 cups whole wheat flour
1/2 cup bran flake cereal
3 tablespoons gluten (optional)
1 teaspoon cinnamon
1 cup + 1 tbl. apple juice
1/2 cup applesauce, warmed
1 apple, grated with skin (1 1/4 c.)

Put all the ingredients into pan in the order listed, select wheat cycle and push start.

100% Whole Wheat Bread Mix
   
 

These are the instructions from the label. Makes a beautiful 1 1/2lb loaf.

Ingredients:
One 100% Whole Wheat Bread Mix 
2 Tbsp. Canola (or other) Oil 
1 1/4 Cups Plus 2 Tbsp. Warm Tap Water 

FOR BREAD MACHINES:

Baking Directions: For 1 1/2 pound bread machine: Put approximately 11 ounces (1 1/4 cups plus 2 Tbsp.) warm tap water into machine. LOCATE AND REMOVE THE ENCLOSED YEAST PACKET. Add the contents of the package of 100% Whole Wheat Bread Mix, 2 Tbsp. canola (or other) oil, and contents of yeast packet. Put machine on basic white bread or medium setting. Turn on machine. Check mix during first 5 minutes of mixing cycle. If mixture is too dry, add another tablespoon or two of water. Note: Too much water will cause "craters" (a dip in the top). (Caution: Be sure your machine will handle whole wheat flours. Check your instructions.)


FOR BAKING BY HAND IN CONVENTIONAL OVEN

Baking Directions: LOCATE AND REMOVE THE ENCLOSED YEAST PACKET. Add contents of the yeast packet to the mix. COMBINE the 100% Whole Wheat Bread Mix, 2 Tbsp. canola (or other) oil and approximately 11 ounces (1 1/4 cups plus 2 Tbsp.) warm tap water. KNEAD 8-10 minutes. Place in a greased bowl, COVER & LET RISE in a warm place until doubled (approx. 1 1/2 hours). PUNCH down, COVER & LET RISE until doubled (approx. 30-45 min). FORM loaf and place in a greased 9 x 5 x 3 bread pan. GREASE top of loaf. COVER with plastic wrap and LET RISE in a warm place until doubled (approx. 45 min). BAKE at 375° for 30-40 miuntes. THUMP top of loaf. A hollow sound indicates a properly baked loaf. TURN OUT of pan, COVER with a towel and COOL before slicing.

INGREDIENTS:

1 1/8 cups water

3 cups whole wheat flour

1 1/2 teaspoons salt

1/3 cup honey

1 tablespoon dry milk powder

1 1/2 tablespoons shortening

1 1/2 teaspoons active dry yeast



DIRECTIONS:

1. Place ingredients in bread machine pan in the order suggested by the

manufacturer. Select Whole Wheat setting, and then press Start.
