HONEY SPICE BREAD

1 C. plus 2 T. milk

1 T. butter

1 1/2 T. honey

3/4 t. salt

1 1/2 t. ground cinnamon

1/4 t. ground cloves

1/2 t. ground coriander

3 C. flour

1 1/2 t. bread machine yeast

Add milk, butter, honey, salt, cinnamon, cloves, coriander, flour and yeast to bread machine pan in the order suggested by the manufacturer. Select basic cycle; medium/color settings.

Yield: 1 (1 1/2-pound) loaf.

Honey Mustard Bread for Bread Machine

1/2 cup water
1 1/2 cups white bread flour
1/2 cup wheat bread flour
2 teaspoons dry milk
2 1/2 tablespoons honey
1/2 teaspoon salt
1/4 cup chicken broth -- canned/low salt
1 2/3 tablespoons gourmet mustard
1 teaspoon chives -- dried
1 teaspoon fast rise yeast ***or***
2 teaspoons active dry yeast  

You don't need to love mustard to love this bread. The mustard adds a subtle, secondary flavor. This bread makes an unforgettable ham sandwich, or it can be served warm with baked ham or roast duck.

Grey Poupon Country Dijon Mustard is good in this recipe, but experiment with different brands. DO NOT USE DRY MUSTARD! This recipe can be made with the regular and rapid bake cycles.

Large loaf:

3/4 cup Water
2 cups White bread flour
1 cup Wheat bread flour
1 tablespoon Dry milk
1/4 cup Honey
1 teaspoon Salt
1/2 cup Chicken broth -- canned/low salt
2 1/2 tablespoons Gourmet mustard
2 teaspoons Chives -- dried
2 teaspoons Fast rise yeast ***OR***
3 teaspoons Active dry yeast

Honey Bunnies
Yield: 6 bunnies

Dough
1 / 3 cup evaporated milk
1 / 4 cup water
1 / 4 cup honey
1 / 4 cup butter or margarine
1 large egg
1 / 2 teaspoon salt
2-1 / 3 cups bread flour
2 teaspoons (1/2 ounce or 4 1/2 tsp) Fleischmann's Bread Machine Yeast

Raisins for eyes

Honey Glaze
4 tablespoons honey
2 tablespoons butter or margarine

Add dough ingredients to bread machine pan in the order suggested by manufacturer. Select dough/manual cycle.
Or, combine ingredients, as usual, beat 2 minutes at medium speed of electric mixer and knead on lightly floured surface until smooth and elastic, about 4 to 6 minutes. Cover; let rest 10 minutes

When cycle is complete, remove dough from machine to a lightly floured surface. If necessary, knead in enough flour to make dough easy to handle. Divide dough into 6 equal pieces. Roll each to 20-inch rope. Divide each rope into 1 (12-inch), 1 (5-inch), and 3 (1-inch) strips. Coil 12-inch strip to make body; coil 5-inch strip to make head. Attach head to body; pinch to seal. Shape remaining 3 strips into ears and tail; attach to head and body. Place on greased baking sheet. Cover; let rise in warm, draft-free place until doubled in size, about 45 minutes.

Bake at 375 F for 12 to 15 minutes or until done. Remove from sheet to wire rack. Brush with Honey Glaze while warm. Insert raisins for eyes. If desired, brush again with Honey Glaze before serving.

Honey Glaze:
In a small saucepan, combine honey and butter. Cook over low heat until butter melts, stirring occasionally.

Squaw Bread (1 1/2 lb. loaf)

1 1/3 cups water
3 tablespoons oil
3 tablespoons honey
2 tablespoons raisins
2 tablespoons brown sugar
1 1/2 cups bread flour
1 1/4 cups whole-wheat flour
3/4 cups medium rye flour
1/4 nonfat dry milk
2 tablespoons gluten
1 teaspoons salt
1 1/2 teaspoons yeast

1. In a blender or food processor, combine 1/2 cup of the water, the oil, honey, raisins, and brown sugar. Let stand for 5 minutes to soften the raisins, then process. Add the remaining water and process again.

2. Place the raisin water and the remaining ingredients in the bread machine according to manufacturer's instructions.
Set crust on light, program for Whole-Wheat Bread, and press Start. Or program for dough cycle and shape, rise and bake at 350' for 30-35 minutes or til internal temp. of about 180'.
