Breakfast Cookies



6 slices bacon



4 eggs



2/3 cup butter, softened



1 cup sugar



1 tsp. vanilla



1 cup flour



1/2 tsp. salt



3 cups oatmeal



1 cup sharp cheddar cheese, shredded



Fry bacon. Drain, cool, crumble and set aside. Cook and scramble two

of the eggs and set aside. In a large bowl, cream together butter and

sugar. Stir in the remaining two eggs and vanilla. Add flour, salt,

and oatmeal and mix well. Carefully fold in the bacon, scrambled eggs,

and cheese. Drop by teasonpoonfuls onto greased cookie sheets. Bake at

350 degrees for 10-12 minutes. Serve warm or cold.

Apple Breakfast Bars
1/2 cup whole wheat flour

1/2 cup all-purpose flour

1 cup raw oats

1/2 cup brown sugar, firmly packed

1/2 teaspoon salt

1/4 teaspoon baking soda

1 1/2 teaspoons apple pie spice

1 1/2 cups grated, unpeeled Michigan Apples

1 egg

1/3 cup light corn syrup

2 tablespoons vegetable oil

1/2 cup chopped nuts, optional



1. In medium-size mixing bowl, combine flours, oats, brown sugar, salt, soda
and spice. Add remaining ingredients, mixing until thoroughly combined.
Spread evenly in 9 x 9 x 2-inch baking pan sprayed with no-stick cooking
spray.


2. Bake in 350o F. oven about 25 minutes or until light golden brown and
wooden pick inserted near center comes out clean. Cool completely on wire
rack. Store tightly covered in refrigerator

Raisin & Cinnamon Breakfast Bars

4 cups Bisquick
4 cups oats
3 or 4 eggs
1 teaspoon cinnamon
1 teaspoon sugar
2 cups cottage cheese
(or plain yogurt)
1/4 to 1/2 cup raisins
1/2 cup applesauce
1/2 cup water,if needed, for stiff dough

Mix together, pat out onto greased pan about 1/2 inch thick. Bake at 300
degrees for 30 minutes or so until getting dry. Take out of oven, turn off,
cut into bars the size you want, put back into oven to continue cooking
(drying). When cooled, break into bars. (Freeze some)

Peanut Butter Breakfast Squares

1 large egg white
1 1/4 cup old fashioned rolled oats
1/4 cup honey
1/4 cup oat bran
1/4 cup natural creamy peanut butter
1/4 teaspoon cinnamon
1/2 teaspoon vanilla
1/2 cup raisins

Preheat oven to 350F. Coat an 8 inch square pan with nonstick cooking spray. Beat the egg white, honey, peanut butter and vanilla with an electric mixer until smooth. Add the oats, bran, and cinnamon and beat until well mixed. Stir the raisins into the batter. Spread the batter in the pan. Bake for about 20 minutes or until a toothpick inserted in the center comes out clean. Cool in pan and then cut into 16 squares. Store in refrigerator.

No Bake Granola Bars

2 1/2  cups  crisp rice cereal
2  cups  uncooked quick-cooking oats
1/2  cup  raisins
1/2  cup  firmly packed brown sugar
1/2  cup  light corn syrup
1/2  cup  peanut butter
1  teaspoon  vanilla extract
1/2  cup  milk chocolate morsels

Combine first 3 ingredients in a large bowl; set aside.

Bring brown sugar and syrup to a boil in a small saucepan over medium-high heat, stirring constantly; remove from heat. Stir in peanut butter and vanilla until blended.

Pour peanut butter mixture over cereal mixture, stirring until coated; let stand 10 minutes. Stir in chocolate morsels. Press mixture into a 13- x 9-inch pan; cool in pan on a wire rack. Cut into bars.

Makes 4 & 1/2 Dozen
