Chocolate Mayonnaise Cake with Coffee Frosting

(Makes one 9-inch by 13-inch Cake: Serves 15)

Cake Ingredients:
3 cups All-purpose Flour
1 1/2 cups Granulated Sugar
6 Tbs. Cocoa Powder
1/4 tsp. Salt
3 tsp. Baking Soda
3/4 cup Water
3/4 cup Milk
1 1/2 cups Mayonnaise
1 1/2 tsp. Vanilla Extract
Coffee Frosting Ingredients:
2 Tbs. Instant Coffee dissolved in 2 Tbs. hot Water
8-oz. tub of Whipped Topping
In a large mixing bowl, sift together the flour, sugar, cocoa
powder, salt, and baking soda.

Add water, milk, mayonnaise, and vanilla extract. Mix well until
thoroughly blended.

Pour batter into a greased and floured 9-inch by 13-inch baking
pan.

Bake at 350 for 35-40 minutes, or until toothpick inserted in
center comes out clean.

To prepare the frosting, dissolve the instant coffee in the hot
water. Empty tub of whipped topping a bowl; add dissolved
coffee. Mix with a spoon until thoroughly blended.

Allow cake to cool completely in the pan before frosting.

The cake is best if you put at least a quarter-inch of the
frosting on it. It is also best to store the frosting in the
refrigerator and frost the cake just before serving. Refrigerate
any leftover cake.

Mayonnaise Cake
 
The only Mayonnaise Cake I had ever had was a chocolate
cake...but tried this one and it is quite yummy! No
frosting needed.

List of Ingredients

1 c. boiling water
1 c. chopped nuts (I used pecans)
2 tsp. baking soda
1 c. sugar
1 c. mayonnaise
2 c. flour
1 tsp. vanilla
1/2 c. brown sugar
1/2 c. nuts, chopped (again, I used pecans)
1 c. chocolate chips

Recipe

Combine first 7 ingredients and mix well. Put in a greased and
floured 9x13 pan. Combine brown sugar, nuts, and chocolate
chips; sprinkle over batter. Bake at 300* for 45 min. Cool.

Mayonnaise Cake with Ice Cream Frosting 

This is a moist thick cake, once you've tried it you'll have a
hard time with box mixes, especially since this is so easy! 
Happy Baking!

Grease and Flour a 9" by 13" pan
preheat the oven to 375 degrees F.
                                   
2 cups flour
1 cup sugar
2 teaspoons baking soda
1/4 teaspoon salt
1/2 cup cocoa
Mix the above ingredients well.

To that mix add:
1 cup boiling water
1 teaspoon vanilla
1 cup Miracle Whip (not regular mayonnaise, must be Miracle
Whip, and must not be the lite variety)

Mix well, lumps and the like are no problem.  Pour into pan and
cook for 30-35 minutes (or until fork inserted comes out clean).
Cool inpan, <mine never leaves the pan : ) >  Frost with
Ice Cream Frosting (recipe to follow).

Ice Cream Frosting

2 1/2 tablespoons flour
1/2 cup milk

Cook on stove top until you get a really thick paste (under 5
minutes for me).  Let sit until cool to touch--(when I'm in a
hurry I throw it into the refrigerator or freezer, depending
on time constraints).

Meanwhile, in a bowl, blend:
1/2 cup sugar
1 stick (1/2 cup) of margarine
Note: I have also made this with butter, but I prefer
margarine.  Both are excellent.

Combine the flour mixture and butter/sugar mixture; whip with an
electric mixer.  Mix until smooth (again, lumps are not the end
of the world, but try to get most of them out). 
Cool in refrigerator until ready to use. I have had better luck with lumps if I cool to room temp and not put in the fridge or freezer.

Choco-Mayo Cake

3 Cups Flour
4 Tablespoons Cocoa
1 Cup Sugar
1&1/2 teaspoons Soda
1 Cup Mayo
2 Teaspoons Vanilla
1 Cup Cold Water

Mix the dry ingredients together. Make a well in the center, then pour in the water and mayo and vanilla and beat until smooth. Bake in a 9x13x2" pan, greased and floured, at 350 degrees for 35 to 40 minutes. Frost with favorite frosting.

1 cup coarsely chopped pitted dates
1 cup sugar
1 cup Hellmann's Real Mayonnaise
6 tablespoons grated unsweetened chocolate (1 1/2 ounces)
1 teaspoon vanilla extract
2 cups cake flour

Heat oven to 350 degrees F. Grease and flour a 9-inch square pan.

Stir together baking soda and boiling water in a medium-size bowl until baking soda is dissolved. Stir in nuts and dates. With mixer at low speed, beat together sugar and mayonnaise in large bowl until well blended. Ad chocolate and vanilla extract; beat until well blended. Add date mixture; beat until blended. Gradually beat in flour until smooth. Turn into prepared pan. Bake until wooden pick inserted in center of cake comes out clean, 45 to 50 minutes. Cool cake in pan on rack. Dust with confectioners' sugar and serve with whipped cream or frost with Fudge Frosting if desired.

Fudge Frosting:
2 cups confectioners' sugar
1/2 cup Hershey's Syrup
1/4 cup Hershey's Cocoa
1/4 cup melted butter
1/2 teaspoon vanilla extract

Stir together all ingredients in a small bowl until blended.

pinch of salt
4 Tbsp cocoa
1 tsp vanilla

Mix all ingredients together and bake at 350 degrees for about 35 to 40 minutes or until it springs back when it is touched in center.

German Chocolate Icing:
1 cup sugar
1 cup evaporated milk or cream
1 cup coconut
3 beaten egg yolks
1 stick butter
1 tsp vanilla
1/2 cup pecans

Combine your sugar and milk, beating egg yolks together, then add butter. Cool all until it gets thick. Add your vanilla, coconut and pecans. Ice cooled cake.

1 cup mayo

Mix dry ingredients together, and then mix in the remaining items. Mix well and bake at 350 degrees until done. This makes one layer. I usually put it in a square pan to bake. Add any icing you like.
