Buttermilk Candy



1 cup buttermilk

2 cups sugar

2 tbs. margarine

2 tbs. white Karo syrup

1 tsp. soda

1 tsp. vanilla extract

2 cups pecans, chopped



Combine buttermilk & soda. Pour over sugar. Let

stand for 5 minutes. Add syrup. Cook slowly,

stirring constantly, until it forms a soft ball in

water. Remove from heat. Add margarine & vanilla.

Beat well & add pecans. Spoon onto buttered foil.

Buttermilk Fudge

2 cups granulated sugar
1/2 cup buttermilk
1/2 tea. salt
1 tablespoon butter
1/2 cup broken nut meats
1 tea. vanilla extract

Combine sugar, buttermilk, and salt and boil together for five
minutes.
Add the butter and continue to cook until the mixture reaches the
soft ball stage. 237 degrees on a candy thermometer)

Remove from heat and cool to about 100 degrees F.

Beat it until it loses its gloss, quickly stir in the nuts and
vanilla. Spread in a buttered pan.

Cool; cut into squares and serve.

Buttermilk Fudge

Tired of your normal chocolate fudge?

Ingredients:
2 C. Sugar
1 C. Buttermilk
1/2 C. Butter
1 Tbsp. Corn Syrup
1 tsp. Baking Soda
1 tsp. Vanilla Extract
1/2 C. Walnuts, chopped

Preparation:
Butter sides of large heavy saucepan or Dutch oven. Combine
first 5 ingredients in pan and col over medium-low heat, stirring
constantly until butter melts and sugar dissolves. Use a party
brush dipped in hot water to wash down any sugar crystals on
the sides of the pan.
Increase heat to medium and bring to a boil. Do not stir while
syrup is boiling. Continue to cook till syrup reaches a softball
stage (234 - 240 degrees.)
Remove from heat; add vanilla. Do not stir until syrup cools to
200 degrees.
Using medium speed of an electric mixer, beat fudge till thicken
and no longer glossy. Stir in walnuts. Pour into buttered 8 x 8
inch pan. Cool completely.
Cut into squares and store in an airtight container.

Buttermilk Candy

1/4 pound butter
1/3 cup corn syrup
1 teaspoon baking soda
Dash of salt
1 teaspoon vanilla
Nuts, to taste

Put sugar, buttermilk, butter, corn syrup, baking soda and salt in a large pot and boil to firm ball sage. Remove from heat and add vanilla and nuts. Stir until thick and pour out onto a sheet of buttered foil. Cut into pieces when slightly cooled.

Mix buttermilk, sugar, and soda and boil. Stir till, sugar is melted and boil until it reaches soft bell stage. Add butter, maple flavor and cool till lukewarm. Then beat till thick and add nuts:

1/2 tsp. baking soda 
1/2 cup buttermilk
1 tbsp. butter 
1/2 tsp. maple flavoring
1 cup coarsely chopped nuts

Cook first 4 ingredients to the soft ball stage. Remove from heat. Add remaining ingredients. Beat till thick and creamy. Drop by spoonfuls on wax paper.
