Butter Crisp Cracker Candy

Approximately 50 saltine crackers
1 stick butter
1 cup brown sugar
1 cup chocolate chips (white, dark, milk, semisweet or mixture)

Preheat oven to 350 degrees F. Line a jellyroll pan with aluminum foil. Layer tightly placed saltine crackers on top of foil.

Melt butter in saucepan. Add brown sugar and stir over medium heat until it forms a thick syrup. Pour syrup evenly over crackers. Spread with a spatula to be sure all crackers are coated with syrup.

Bake for 15 minutes (be careful not to burn).

Sprinkle chocolate chips over hot crackers and let stand for 2 minutes until chocolate chips are melted enough to spread. Lightly spread the chips with a spatula or knife until there is a smooth coating of chocolate. Chill until hard.

Peel off the foil. Break into pieces and serve.

Cracker Candy

8 oz Waverly or Club crackers divided (2 sleeves out of a box)
1 C butter
1/2 C milk
2 C graham cracker crumbs
1 C packed brown sugar
1/3 C sugar
2/3 C peanut butter
1 C choc chips

Place 1/3 of crackers flat in bottom of 9x13 ungreased pan. In a saucepan put butter, sugars, graham cracker crumbs and milk. Bring to a boil and boil stirring constantly for 5 minutes. Be sure to not undercook as is too runny if you do. Pour 1/2 over crackers spreading evenly. Put on another layer of crackers and another layer of hot mixture. Top with a third layer of crackers.

In a saucepan over low heat melt the chips and peanut butter together. When melted spread over the crackers and chill for 1 hour. Cut into small squares

1 pound miniature marshmallows
