14-MINUTE MAPLE CANDY



4 cups Maple syrup

1 cup Cream

1/4 cup Butter

1 cup Nut meats -- chopped

1 teaspoon Lemon extract



Cook the maple syrup, cream, and butter for 9 minutes

after the boiling point is reached. Remove from heat,

add the nut meats and extract and stir for 5 minutes.

Pour into buttered pans and when cool, cut into squares.

Maple Fudge

2 cups sugar 
1/2 cup maple syrup
1 cup light cream
dash salt 
1/2 cup chopped walnuts or pecans

Combine all ingredients, except nuts in 2 quart saucepan. Stir over low heat till sugar is dissolved and mixture comes to a boil. Increase heat medium. Cook, stirring occasionally to 236° (soft ball stage). Pour into lightly buttered platter. Cool to lukewarm. Beat with spoon till creamy and mixture loses its gloss. Add nuts. Turn into pan lined with wax paper. Cut into squares.

Maple Fudge recipe

Ingredients:
3 cups of maple syrup.
1 cup of milk.
½ cup of chopped nuts.

Preparation Instructions:
In a heavy saucepane, boil the maple syrup and milk to the soft ball stage (about 236°F or 114°C).

Remove from the heat and allow to cool slightly.

Beat the mixture until it is creamy.

Add the chopped nuts.

Pour the mixture into an eight-inch buttered square pan.

Allow to cool until the fudge is firm; then cut into pieces.
