Black Walnut Blondies

1 1/2 cups unsifted self rising flour
1 cup packed light brown sugar
1 cup sugar
1 cup vegetable oil
4 eggs, slightly beaten
1 cup black walnuts

Preheat oven to 350F. Blend first three ingredients in medium bowl. Combine oil and eggs in separate bowl. Add to dry ingredients, stirring until moistened. Stir in black walnuts. Pour into greased 9 x 13 inch pan. Bake for 30 to 35 minutes. Cool. Cut into squares.

Apple Harvest Blondies

2/3 cup butter
2 1/4 cups packed brown sugar, divided
3 eggs
2 cups flour
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon vanilla
2 large red apples, peeled, cored and chopped
3 ounce block of cream cheese
2 ounce chopped pecans
1 teaspoon cinnamon

Place cream cheese in freezer for one hour. Preheat oven to 350F. Melt butter in a large saucepan. Remove from burner and stir in 2 cups brown sugar and stir thoroughly. Add the eggs, flour, baking powder, salt and vanilla and stir until well blended. Fold in chopped apple and place the mixture in an ungreased 9 x 13 baking pan. Chop the cream cheese into small pieces and mix with the remaining 1/4 cup brown sugar, pecans and cinnamon. Sprinkle mixture on the batter and bake for 35 minutes. Serve warm or at room temperature. Refrigerate leftovers.
