Maple Oatmeal Drops

Makes 4 Dozen Cookies.

1/2 cup (1 stick) butter
1 3/4 cups all purpose flour
1/2 cup firmly packed brown sugar
1 tsp. baking soda
1/2 tsp. ground cinnamon
1 egg
1/2 tsp. ground ginger
1/2 cup maple syrup (dark)
1/4 tsp. salt
1/3 cup dairy sour cream
1 1/4 cups rolled oats (quick)

In a small bowl or mixer, cream butter and sugar until light and fluffy. Add egg, maple syrup and sour cream. Beat well. Mix flour, baking soda, cinnamon, ginger and salt. Add to creamed mixture. Stir in oats. Drop by spoonful on greased pan. Bake at 375°F 8 to 10 minutes. Sprinkle cinnamon and sugar.

Maple Syrup Drop Cookies

1 cup pure maple syrup   2 cups flour
1 egg   1/2 teaspoon salt
1/2 cup shortening   1 small teaspoon soda
1 small teaspoon baking powder      

Mix ingredients, add nutmeats and/or chocolate chips. Bake for 12 minutes at 400-degree F oven.

Chewy Maple Cookies Recipe

Ingredients
1-1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup shortening
1 cup packed brown sugar
1 egg
1/2 cup maple syrup
1/2 teaspoon vanilla extract
1 cup flaked coconut

Instructions
Preheat oven to 375 degrees F. (190 degrees C.). Lightly grease baking sheets.

In medium bowl combine flour, baking powder and salt; set aside.

In a mixing bowl, cream shortening and brown sugar until fluffy. Beat in the egg, syrup, and vanilla until well mixed. Stir in flour mixture until just mixed and then stir in coconut.

Drop by tablespoonfuls 2-inches apart onto prepared baking sheets. Bake for 10-12 minutes or until golden brown. Transfer to wire racks to cool. Store in airtight container.

Yield: 3 dozen

Chewy New England Maple Cookies Recipe

  • 1/2 cup Pure Maple Syrup - Medium or Dark Amber
  • 1/2 teaspoon vanilla extract
PREHEAT oven to 375 F. degrees. Lightly grease baking sheets.

In medium bowl combine flour, baking powder and salt; set aside.

In a mixing bowl, cream shortening and brown sugar until fluffy. Beat in the egg, syrup, and vanilla until well mixed. Stir in flour mixture until just mixed and then stir in coconut.

Drop mixture by Tablespoonfuls - 2 - inches apart onto prepared greased baking sheets. Bake for 10 to 12 minutes or until golden brown. Transfer to wire racks to cool. Store in airtight container. Yield: About 3 dozen delicious chewy maple cookies.

Preheat oven to 350 degrees F. Beat together butter, syrup, sugar, eggs and vanilla. Add oats. Mix together and add flour, salt and soda. Mix well. Drop by rounded teaspoonfuls onto greased cookie sheet. Bake for 12 to 15 minutes.

Short Stack Cookies
  
  1 1/2 cups melted butter
  2 cups sugar
  2 large beaten eggs
  1/2 cup maple syrup
  4 tsp baking soda
  1 tsp salt
  1 tsp vanilla
  4 cups flour
  1/2 cup white sugar for coating
  
  Melt the butter and mix in the sugar.  Let it cool and add the beaten eggs.
Add maple syrup, soda, salt and vanilla.  Mix it all up.  Then add the flour and
mix thoroughly.
  
  Chill the dough for at least 1 hour.
  
  Roll the dough into walnut-sized balls with your hands.  Roll the balls in
white sugar and place them on greased cookie sheets, 12 to a standard sheet.
Flatten them with a spatula.
  
  Put oven rack in the middle position.  Bake at 350 degrees F for 10-12 minues
or until nicely browned.  Cool on the cookie sheets for no more than 1 minute,
then remove the cookies to the rack to finish cooling.

Maple Walnut Chippers

Ingredients:

2 1/4 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 c. margarine, room temperature
1/2 c. sugar
1/2 c. brown sugar, firmly packed
1/4 c. maple syrup
1 egg
1/2 c. walnuts, coarsely chopped
2 c. semi-sweet chocolate chips

Directions:

Preheat oven to 375 degrees. Mix together flour, baking soda and salt. Set
aside. In a large mixing bowl, cream together the margarine, sugars, maple
syrup and egg. Add the dry ingredients and mix until blended. Stir in nuts
and chocolate chips. Drop by teaspoonfuls onto ungreased baking sheet,
spacing well apart. Bake for 8 to 10 minutes, or until cookies are golden
brown. Cool for a few minutes on the sheet then remove cookies to a cooking
rack. Makes 6 dozen.

Whole Wheat Maple Snickerdoodles

2 2/3 cups whole wheat flour
1 teaspoon cream of tartar
1 teaspoon baking soda
1/2 teaspoon cinnamon
1 cup butter
2/3 cup maple syrup
2 eggs
2 Tablespoons raw sugar
1 teaspoon cinnamon

Mix first four dry ingredients together in a small
bowl. In a different, larger bowl, cream butter
thoroughly. Slowly add maple syrup to butter, mixing
thoroughly. Mix in eggs, one at a time to butter
mixture. Add flour gradually and mix together.

Cover and refrigerate dough for at least one hour or
until dough is firm enough to handle. Form dough into 1
inch balls; roll in a mixture of the 2 TBS sugar and 1
tsp cinnamon. Place on very lightly greased cookie
sheet (or parchment); flatten cookies slightly with
bottom of a drinking glass. Bake in a 375* oven for
about 8 minutes or until light golden. Cool on wire
racks. Yields about 5 dozen.

Maple Bars

Makes Approx. 16 Bars.

1/2 cup sugar
2/3 cup sifted flour
1/2 cup soft shortening (I use 1/4 cup butter and 1/4 cup shortening)
1 cup nutmeats
1 cup rolled oats
1/2 tsp. baking powder
1/2 cup maple syrup
1 tsp. vanilla
1 egg

Heat oven to 350'. Grease a square pan, 8 x 8 inches. Mix all ingredients thoroughly. Spread in prepared pan. Bake 30-35 minutes. Cut into squares while still warm.

Easy Maple Squares

3 beaten eggs
1/2 tsp. salt
2/3 cup cooking oil
3/4 cup chocolate chips
1 cup dark maple syrup
1/2 cup chopped walnuts
1 tsp. vanilla 2 cups flour
1 tsp. baking powder

Mix in order given. Pour into 13 x 9 pan, bake at 350°F for 30 minutes. Do not over bake.

Maple Pecan Squares

Base

1/2 cup butter, melted 1 cup flour
1/4 cup brown sugar    

Mix above with fingertips and press into an 8" x 8" pan. Bake 350 degrees, 5 minutes.

Topping

2/3 cup brown sugar 1/4 cup butter
1 cup maple syrup   2/3 cup pecans
2 eggs   1/2 teaspoon vanilla
1/4 teaspoon salt   2 tablespoons flour

Mix brown sugar and maple syrup. Simmer for 5 minutes. Cool to lukewarm. Add beaten eggs, stirring constantly. Add other ingredients. Spread over base. Bake 400 degrees F, 5 minutes. Then reduce to 350 degrees F for 20 minutes or until firm. Serve with ice cream or whipped cream.

Maple Pecan Pie Bars 

 Ingredients: 
6 tablespoons butter or margarine, softened 
1/2 cup packed brown sugar, divided 
2 eggs, divided 
1 cup all-purpose flour 
1 cup pecans, chopped 
2/3 cup maple-flavored syrup 
1 teaspoon vanilla 
1/4 teaspoon salt 

Directions: 
1. Preheat oven to 375°F. Spray Square Baker with vegetable oil using Kitchen Spritzer. Combine butter and 1/4 cup brown sugar in Classic Batter Bowl using Bamboo Spoon. Separate one egg using Egg Separator; reserve yolk. Beat egg white into butter mixture. Add flour, stirring until well blended and dough forms. Press dough onto bottom of Square Baker using lightly floured Baker's Roller�? Bake 15 minutes. 

2. Meanwhile, chop pecans using Food Chopper. In Small Batter Bowl, whisk together syrup, reserved egg yolk and remaining egg, remaining 1/4 cup brown sugar, vanilla and salt using Stainless Steel Whisk. Stir in pecans. Pour over hot crust; continue baking 13-15 minutes or until filling is set and crust is golden brown.

Yield: 25 bars

Maple Snaps

Ingredients:

1/2 cup butter or light butter
2 cups granulated sugar
1 cup maple syrup
3 cups all-purpose flour
1 tsp. ground ginger
1 tsp. baking soda
1 tsp. salt
1/2 cup cold water

Cream shortening and sugar, then add the maple
syrup and beat well. Sift flour with dry ingredients
and add to make syrup mixture alternately with
water. Mix well and drop by teaspoonfuls on a
greased cookie sheet. Bake in 375 F. degree
oven for about 15 minutes or until lightly browned.
Cool before removing from the cookie sheet.
