Honey-Pecan Pork Cutlets - Genie 

4 pork cutlets, 1/4-inch thick
1 tablespoon butter
4 tablespoons honey
4 tablespoons chopped pecans


Melt butter in large heavy skillet over medium-high heat; brown cutlets on one side; turn; stir together honey and pecans and add to pan, stir gently. Cover and simmer for 7-8 minutes. Serve cutlets with sauce from pan. This will serve 4 people.

MARINATED PORK SHOULDER BLADE STEAKS

Marinade:

1 can of beer
1 small jar of Bar-B-Que sauce
1 clove garlic, crushed

Combine these ingredients. Marinate the steaks overnight in the refrigerator. Turn the meat in the morning. In the evening, broil the steaks to medium or medium rare.

Easy Skillet Pork Chops

Makes 4 servings



2 tsp Canola Oil

4 Pork Chops

1 Can (14.5 oz) Chicken Broth

1 Onion, chopped

2 Cloves Garlic, chopped



Heat oil in large skillet, then brown pork chops on both sides. Add the

chicken broth, onions and garlic (and other spices, to taste).



Simmer on low heat for about an hour. The pork chops will be very tender

and not dried out.

Kielbassa-Potato Casserole

  • 1 pkg Scalloped Potato Mix (5.25 oz.) - Betty Crocker, Hungry Jack or similar product
  • 2 cups boiling water
  • 2 T. margerine
  • 2/3 cup milk
  • 1 medium onion - finely chopped
  • 1 lb. Kielbassa

Preparation -
In an oblong glass baking dish, mix potatoes, sauce mix, boiling water, margerine and milk. Stir in chopped onion. Slice kielbassa diagonally into 1/4" to 1/2" thick slices.Arrange slices in rows on top of potato mixture. Bake at 375º for 35 to 40 minutes. Let stand a few minutes before serving.

Air-fried Pork Chops
 
Ingredients
4 (3/4-inch thick) pork loin chops
1/2 cup Dijon mustard
1 cup Italian bread crumbs
1/2 teaspoon Salt
1/2 teaspoon Pepper
1/4 teaspoon Cayenne pepper

Preparation
Preheat the oven to broil.

Thickly coat pork chops with Dijon mustard. In a shallow bowl, combine bread crumbs and seasonings. Dredge pork chops in crumbs. Arrange pork chops on a wire rack set on top of a sheet pan. Place under broiler and cook on both sides until coating is brown, about 5 minutes on each side.

America’s Favorite Pork Chops

 4        top loin pork chops
 3/4    cup Italian dressing
 1        teaspoon Worcestershire sauce

Place all ingredients in a self-sealing bag; seal bag and place in refrigerator for at least 20 minutes (or as long as overnight). Remove chops from bag, discard marinade and grill over a medium hot fire, turning once, until just done - about 8 to 15 minutes total cooking time (depending upon thickness of chops).

Makes 4 servings

2008 Apple Recipe Contest Winners

 Five Ingredients or Less Category


Bavarian Pork Chops and Kraut

 

8           Pork chops, browned

2 cans Sauerkraut (or 1 large bag)

1            Medium onion, sliced

2      Apples, sliced

1 cup  Apple juice

Salt, pepper, sage, parsley flakes, brown sugar

 

Place sauerkraut in a greased roasting pan.  Sprinkle with brown sugar.  Put browned pork chops on top.  Season with salt, pepper, sage, and parsley flakes.  Top with sliced onions and sliced apples.  Pour apple juice over all.

Bake at 350º for 1 to 1½ hours.

Crescent Roll Casserole

1 (8 ounce) tube refrigerated crescent rolls
1 pound sausage, cooked well and drained
2 1/2 cups grated Monterey jack cheese
6 eggs, beaten
3 tablespoons minced green bell pepper
1 cup milk
Salt and black pepper to taste

Unroll tube of crescent rolls and press together to cover bottom of 9
x 13-inch pan and to seal perforations. Crumble cooked sausage evenly
over crescent rolls.

Beat together the eggs, milk, salt and black pepper. Stir in cheese
and green pepper to mix well. Pour over sausage. May refrigerate
overnight at this point or bake immediately.

When ready to serve, bake at 425 degrees F for 20-25 minutes until
browned. Serve with salsa.

Fabulous Homemade Skillet Dinner

Slice 7-8 potatoes

1 pod of garlic

2 whole tomatoes sliced

1 half package of bacon sliced

1 package of Kielbasa sausage cut into pieces

Cover bottom of pan with cooking oil of choice. Cook ingredients

together in large chicken fryer pan. Cook until Potatoes are soft.

Serves 4 to 5.

A delicious, quick and easy main ham dish that can be broiled or grilled.

Glazed Ham Steak

1/3 cup spicy brown mustard
1/4 cup honey
1 teaspoon grated orange peel
1 (2-pound) fully cooked ham steak
  1. In a small bowl, combine mustard, honey and orange peel. Brush over one side of ham.
  2. Broil or grill, uncovered, over medium-hot heat for 7 minutes. Turn; brush with mustard mixture. Cook until well glazed and heated through, about 7 minutes.

Serves 6

Country Baked Ham
1 8 lb. ham


3 quarts sweet cider


2 cups maple sugar(or brown sugar)


2 teaspoons dry mustard


1 teaspoon powdered cloves


1 1/2 cup water


2 cups raisins


Instructions
Simmer ham in cider for 2 hours; drain. Cover with paste made from sugar, mustard, cloves and water. Place in baking dish. Pour cider over ham. Add raisins to pan bottom. Bake for 2-1/2 hours at 325*F basting frequently.

Cherry Coke Glazed Ham

1 fresh ham -- 4-5 lbs.
1 can cherry cola

Bake ham at 325ºF.

Pour can of cherry coke over ham while baking.

Baste often until ham reaches internal temperature of 170ºF.

Cola Basted Ham

1 (1 pound) cured ham
2 (12-ounce) cans cola


Preheat the oven to 325 degrees F.

Place ham in a shallow roasting pan. Baste the ham with cola, and cover it with foil. Bake for 15 to 18 minutes per pound of ham, or until the ham reaches an internal temperature of 140 degrees F. Baste with cola about every 30 minutes.

Oven Fried Pork Chops

4 pork chops cut 3/4 inch thick
2 tablespoons butter or margarine melted
1 egg beaten
2 tablespoons milk
1/4 teaspoon pepper
1 cup herb seasoned stuffing mix or cornbread stuffing mix crushed

Trim excess fat from chops. Pour butter in a 13 by 9 inch pan. Combine egg,
milk and pepper. Dip chops in egg mixture and coat with stuffing mix. Place
in pan. Bake at 425 degrees for 10 minutes. Turn chops and bake about 10
minutes more or until no pink remains and juices run clear.

Serves 4

Spare Ribs & Sauerkraut
1 lb. spare ribs
1, 32 oz., bag sauerkraut, store brand is fine
salt and pepper to taste
1/3 cup water or less

In a 9x13" or small pan put the kraut in the bottom adding about 1/3 cup water. Then salt and pepper the spare ribs and then put on top of kraut. Cover and cook in a 325º to 350º oven for at least 1½ to 2 hours. I have not cooked this meal in the oven for over 10 years or longer. I do mine in the Crock Pot putting the kraut and water in it the night before letting it cook all night and then in the morning I put the ribs around the kraut making sure a couple of ribs are on top of the mixture. Then letting it cook until 5:00 to 6:00pm. I guess the secret is the pork fat takes out the tartness. We do not add anything else to it. To complete the meal we have carrots, corn bread, of course mashed potatoes and Orange Jell-O for dessert. Not a diet meal. To me this meal is so simple but so good and easy to make.
