Bisquick Pudding Cookies

3/4 c. Bisquick
1 pkg. instant pudding (any flavor)
1/4 c. vegetable oil
1 egg

Heat oven to 350 degrees. Mix ingredients together in a bowl until dough forms a ball. Shape into balls, about a teaspoon. Place on ungreased cookie sheet. Flatten to about 2" with hand. Bake 8 minutes.
Makes 2-1/2 to 3 dozen.

Potato Flake Cookies

1-1/2 c. instant potato flakes
1-1/3 c. Bisquick
1 c. sugar
1 egg
1 tsp. vanilla
1/2 c. melted shortening

Mix all ingredients. Roll into small balls. Flatten with fork. Bake at 350 degrees for 8 to 10 minutes.

Mashed Potato Cookies

1-1/4 c. mashed potatoes (Hungry Jack)
1-1/4 c. Bisquick
1 c. sugar
1 egg
1 stick margarine or butter, melted
1 tsp. coconut flavoring

Mix all together and bake at 325 degrees for 15 minutes or until brown at the edges.

Easy Brownies

1 box German Chocolate cake mix
3 eggs, divided
1 1/2 cups chopped pecans
8 oz. cream cheese
1 lb. powdered sugar


1.Make bottom layer, combine cake mix, 1 egg, and pecans, pat into greased and floured 9x13 pan.
2.Combine cream chees, 2 eggs, and powdered sugar. Pour over bottom layer.
3.Bake at 350 for 30 minutes.

Persimmon Bars

1 cup pulp
1 cup shortening
1 cup brown sugar

Beat shortening, brown sugar, and 1 egg together. Add 1 teaspoon soda to pulp. Plump a cup of raisins. Stir one cup nutmeats into 2 cups flour. Add 1/2 teaspoon baking powder, 1/2 teaspoon salt, 1/2 teaspoon cinnamon, 1/2 teaspoon cloves, 1/2 teaspoon nutmeg. Add dry ingredients to shortening mixture. Spread in greased 9x13 inch pan. Bake at 350° for 25-30 minutes or until done. Frost with powdered sugar and orange juice frosting.

CRUST
1 box yellow cake mix
1 stick butter
2 eggs

Mix above ingredients. Press in a 9 x 13 inch pan. I use a floured spoon.

FILLING
1 (8 oz.) pkg. Philadelphia cream cheese
2 eggs
2 1/2 c. confectioners sugar

Mix and pour over crust; sprinkle top with 1/2 cup chopped nuts. Bake at 350 degrees for 35 minutes.

Cherry Cookies

1 box cherry cake mix
1 egg
2 c. Cool Whip, thawed
6 to 8 maraschino cherries, chopped

Mix above ingredients. With teaspoon roll into 1 to 1 1/2 inch balls, drop into bowl of powdered sugar. Roll to coat ball. Bake on cookie sheet at 350 degrees until golden, about 10 to 15 minutes.

German Chocolate Cool Bars

1 c. Keebler grasshopper cookies, crushed
1/4 c. melted margarine or butter
2 pkgs. (4 oz. each) Baker's German sweet chocolate
1/3 c. milk
1 pkg. (3 oz.) cream cheese, softened
1 container (16 oz.) Cool Whip, thawed

Combine crumbs and melted butter. Press firmly onto bottom of 9 inch square pan. Grate or finely chop 1/2 package of chocolate. Set aside. Heat remaining chocolate and milk in medium saucepan over low heat, stirring until chocolate is melted. With wire whisk beat in cream cheese until smooth. Cool 5 minutes. Fold in 3 1/2 cups of the whipped topping and the grated chocolate. Spread mixture over crumbs. Spread remaining whipped topping over chocolate layer. Freeze until firm (about 2 hours). Garnish with chocolate curls or sprinkles as desired. Cut into bars. Makes about 12 to 15 servings.

Lemon Cookies


1 Pkg. Duncan Hines Lemon Supreme Cake Mix
1 Egg, beaten slightly
1 8 Oz. Cool Whip
Powdered Sugar

Mix cake mix, egg, and Cool Whip together. Coat hands with powdered sugar. Spoon mixture and roll in a ball. Press with wet fork coated with sugar. Bake approximately 10 minutes on a greased cookie sheet at 350 degrees.

1 c. sugar
1 c. Karo
1 1/2 c. peanut butter
6 c. Corn Flakes

Heat sugar and Karo until sugar dissolves. Add peanut butter. Pour over Corn Flakes. Spoon out on wax paper. Let cool.

No Bake Peanut Butter Balls
1/2 cup peanut butter
1/2 cup honey
2 tablespoons powdered milk
1 cup crushed corn flakes cereal

Set corn flakes aside. Mix all other ingredients well. Roll into balls. Then roll again in Cornflakes or (could use coconut or chopped nuts) until covered. Refrigerate leftovers.

1 cup peanut butter

1 cup sugar

1 egg



Blend well and then spoon onto a baking sheet. Flatten

wide with the tines of a fork then turn 90 degrees and

use the fork again.



Bake at 375º for 10 minutes or until done (depends on

your oven) Let cool on pan for 1 minute then remove to

a cooling rack.

PEANUT BUTTER RICE KRISPIE TREATS
1 c. brown sugar
1 c. white Karo
1/2 c. peanut butter
1 box Rice Krispies

Bring Karo and sugar to a boil. Remove from heat and stir in peanut
butter and stir until dissolved. Add cereal and stir until mixture is
well coated. It will probably take only 1/2 box of cereal. Pour up in
buttered pan or drop by spoon on wax paper.

Caramelized Brownies

1 package chewy brownie mix ( Duncan Hines)
4 tablespoons butter
1 cup chopped pecans
1 cup firmly packed light brown sugar


Preheat oven to 350 degrees F.

Prepare the brownie mix according to the package directions. Pour batter into a greased 9 by 13-inch pan. Melt the butter in a small saucepan. Add the pecans and sugar and cook, over medium heat, stirring frequently, until the sugar dissolves. Drizzle the caramel mixture over brownie batter and bake until a toothpick can be inserted and withdrawn cleanly, 25 to 30 minutes.

Chocolate Chewies

3 cups confectioners sugar
1/3 cup baking cocoa
2 tbsp flour
3 egg whites
1 cup chopped pecans

Preheat oven to 350 F. Line a baking sheet with parchment paper. In a mixing bowl, blend the sugar, cocoa, and flour. Beat in egg whites, one at a time, then beat at high speed for 1 minute. Fold in the pecans. Drop by tablespoonfuls onto a baking sheet. Leave 2 inches between each. Bake for 15 minutes. Turn baking sheet halfway through the baking time. Remove from oven and cool on paper. Place cookies on paper in the freezer for 1 hour. Remove and peel off the paper, then store in an airtight container. Yield: 2 dozen
