Hushpuppy Catfish
4 catfish fillets
1 egg, beaten
1 egg white or 2 tablespoons melted butter or margarine
3/4 cup prepared hushpuppy mix
Additional butter or nonstick cooking spray

Preheat oven to 500 degrees F. Spread hushpuppy mix on a plate and spray a baking pan with nonstick cooking spray. When oven is hot, dip fillets in beaten egg, egg white or melted butter or margarine, then dredge well in the hushpuppy mix. Place on prepared baking pan. If fish was dipped in egg or egg white, drizzle each fillet with a bit of melted butter or margarine, or spray tops
with non-stick spray.

Place near top of oven and bake for 5 to 6 minutes. (Fillets more than 1/2-inch thick will take up to 8 minutes.)

Serve with lemon wedges.

Salmon Patties
1 can pink salmon
1 egg
1 tablespoon white cornmeal
1 tablespoon all purpose flour
Pinch of pepper and salt
Oil for frying

Add about 1/2 inch of oil or less to a large skillet and let heat thoroughly over medium heat while you prepare the patties.

Drain liquid from salmon. Remove the big bones from the salmon and as many small ones as you can, you don’t have to get them all because they are small and soft and can be chopped with the salmon. I like to remove the brownish black parts of the salmon as well.

Chop salmon until it is in reasonably small pieces and set aside. In a medium sized bowl beat egg with a fork. Mix in cornmeal, flour, salt, pepper, and salmon. Now comes the fun part. Grab a handful of the salmon mixture with your hands and gently shape it into a round patty. I make my patties about the size of a tuna fish can but you can them bigger if desired.

Place patty in hot oil and press them down to help flatten them more with the back of a spatula. Fry until golden brown on one side. Flip and continue frying until the other side is golden brown. Do not turn your burner higher than medium, I keep mine in between 4 and 5. This will help ensure your patty is cooked all the way through without burning the outside and leaving the inside gooey.

Drain on paper towels or a wire rack and eat warm. Enjoy!

Simple Baked Salmon

  • 2 salmon filets (approx. 1/2 lb each)
  • olive oil
  • tartar sauce

A quick and easy dish that requires very little effort. It works best with fresh salmon purchased the same day you plan to eat it.

Put salmon filets in a glass baking dish. Drizzle a little olive oil over the filets and flip them over a couple of times to spread the oil and get a little oil on the bottom of the baking dish and the under side of the filets.

Bake in a 350 degree oven for 15-30 minutes depending on the thickness of the filets. You want them to be cooked until they start to flake and become opaque inside, but don't dry them out.

Baked Salmon

6 pounds salmon, cleaned
1 whole lemon, sliced
2 whole green onions
2 whole lemons, sliced, for garnish
parsley, for garnish

Heat oven to 350F. Place aluminum foil on a large baking sheet. Place fish on foil. Arrange lemon slices and green onion inside cavity of fish. Wrap foil sheets around fish and seal carefully. Bake fish for 30 minutes. Remove from oven and carefully turn fish over and bake for another 10 minutes. Check to see if fish is done by carefully unwrapping foil and inserting a knife in the thickest part. If fish is still raw in the center, return to oven for 10 minutes. When fish is done, carefully unfold foil, exposing the top side. Peel skin off from the top side and then, holding foil, flip fish over to the other side, on to a sheet of plastic wrap. Remove skin from this side. Using the plastic wrap, roll fish onto an attractive serving dish and garnish with more lemon slices and parsley. Serves 8 to 12.

Dill Baked Salmon

1 1/2 pounds salmon steaks or skinless fillets
1 teaspoon dill weed
1/2 teaspoon onion salt
1 lemon, sliced

Preheat oven to 425F. Place salmon in a baking dish sprayed with cooking spray. Sprinkle with dill and onion salt and top with lemon slices. Cover and bake for 15 to 20 minutes, until flesh turns opaque. Serve with extra lemon. Serves 4.

Easy Baked Salmon

1 whole salmon fillet
1 lemon
1/4 cup mayonnaise
salt and pepper to taste
1 onion, sliced
1/2 cup white wine

Spray baking dish with nonstick spray. Put fillet in pan, skin side down. Salt and pepper lightly. Spread mayonnaise over fillet; salt and pepper. Place onion slices on top and squeeze fresh lemon over top. Pour wine in the bottom of the pan and cover. Bake at 350F For approximately 20 minutes or until salmon flakes.

Sweet Lemon Salmon

4 Salmon Fillets
The juice of an entire lemon
1 T Lemon Zest
2 T Brown Sugar Splenda
1/4 C of water
Salt /Pepper (to season fillets)
1 T of Extra Virgin Olive Oil
 
Preheat Oven to 350 degrees. Put Salt , pepper, and lemon zest on your Salmon. Have a skillet with the Extra Virgin Olive Oil heating up. In a small sauce pan put lemon juice, water, and Brown sugar. Cook on low until sugar is dissolved. Brown salmon fillets on both sides for about a 2 minutes on each side. Transfer salmon to a baking dish and pour brown sugar sauce ontop of the salmon. Cook in the oven for 10-15 minutes. Serve while hot and drizzel some of the brown sugar sauce from the baking dish over salmon.

Serves 4

Honey Dijon Glazed Salmon

4 3oz filet of Salmon (bone removed)
1 1/2 tblsp Dijon Mustard
3 tblsp Pure Honey

Mix honey and dijon well. Place Salmon on baking dish. Brush honey and dijon glaze over salmon. Bake at 350 for 10 min. Brush with more glaze and check for doneness. Serves 4.

Salmon Cakes

2 (7 ounce) can salmon, drained, deboned, and flaked
1 egg, beaten
1 tablespoon olive oil
1 onion, finely chopped
1/2 cup instant potatoes (do not add milk,etc)
Salt and pepper to taste ( or you can use Old Bay Seasoning if you have it)
Preheat oven to 375 degrees. Spray cookie sheet well with cooking spray. Mix all the ingredients together and shape into patties. Place on well sprayed cookie sheet, and bake for 20 minutes turning once.

Serves  8

Potato Chip-Tuna Casserole

1 can Campbell's Cream of Celery or Mushroom Soup
1/4 cup milk
2 hard-cooked eggs, sliced
1 cup peas
1 can tune (about 7oz.)
1/2 cup slightly crumbled potato chips

In 1 quart casserole, blend soup and milk' stir in tuna, eggs and peas.
Bake 350º for 25 minutes or until hot; stir. Top with chips; bake 5
minutes more. Makes about 4 cups.

1 pound butter, clarified
1 tablespoon minced garlic
1 teaspoon salt
1 teaspoon pepper
1 1/2 pounds large shrimp, shelled and de-veined

Heat 3 tablespoons of the clarified butter in a large skillet.
Add garlic and saute. Add salt and pepper and shrimp,
which can be butterflied, if desired. Saute until shrimp
change color and are tender.
Add remaining butter and heat through. Place
shrimp on plates and spoon hot butter over.
Makes 4 to 6 servings.

Baked Fish That Doesn’t Taste Like Fish(Tilapia)

2 lb. tilapia

1 C. sour cream

1 C. mayonnaise

1 pkg. Hidden Valley dry ranch dressing mix

1 can French Fried onions, crushed

Mix sour cream, mayo and ranch mix together. Roll dried fish fillets in mixture then roll in French fried onions. Bake 20-25 minutes at 350. The fish is done when it flakes easily.

1 can cheese soup
1/4 c. milk
2 tbsp. chili sauce
Dash Worcestershire

One Dish Meal With Tuna

12 slices day old bread
6 slices American cheese
4 eggs
2& 1/2 cups milk
1 regular size can tuna

Butter baking dish, cut crust from bread and butter generously. Put six slices of bread, buttered side up, in the baking dish. Put one slice of cheese on each slice of bread, cover with the tuna, top with the other 6 slices of bread, buttered side down. Beat eggs and milk. Pour over bread and refrigerate for at least one hour or overnight. Bake 1 hour at 350°

Ranch Fish Fillets



1/2 cup crushed Pepperidge Farm seasoned stuffing

1/2 pound fresh or frozen (thawed) cod, flounder, red snapper or orange

roughy

1/4 cup ranch dressing



Heat oven to 450 degrees F.



Brush both sides of fish fillets with ranch dressing. Coat both sides

of fish with stuffing. Place on ungreased cookie sheet. Bake uncovered

for 8 to 12 minutes or until fish flakes easily with fork.
