Salmon Patties 1 can pink salmon 1 egg 1 tablespoon white cornmeal 1 tablespoon all purpose flour Pinch of pepper and salt Oil for frying
Add about 1/2 inch of oil or less to a large skillet and let heat thoroughly over medium heat while you prepare the patties.
Drain liquid from salmon. Remove the big bones from the salmon and as many small ones as you can, you don’t have to get them all because they are small and soft and can be chopped with the salmon. I like to remove the brownish black parts of the salmon as well.
Chop salmon until it is in reasonably small pieces and set aside. In a medium sized bowl beat egg with a fork. Mix in cornmeal, flour, salt, pepper, and salmon. Now comes the fun part. Grab a handful of the salmon mixture with your hands and gently shape it into a round patty. I make my patties about the size of a tuna fish can but you can them bigger if desired.
Place patty in hot oil and press them down to help flatten them more with the back of a spatula. Fry until golden brown on one side. Flip and continue frying until the other side is golden brown. Do not turn your burner higher than medium, I keep mine in between 4 and 5. This will help ensure your patty is cooked all the way through without burning the outside and leaving the inside gooey.
Drain on paper towels or a wire rack and eat warm. Enjoy!

Simple Baked Salmon - 2 salmon filets (approx. 1/2 lb each)
- olive oil
- tartar sauce
A quick and easy dish that requires very little effort. It works best with fresh salmon purchased the same day you plan to eat it. Put salmon filets in a glass baking dish. Drizzle a little olive oil over the filets and flip them over a couple of times to spread the oil and get a little oil on the bottom of the baking dish and the under side of the filets. Bake in a 350 degree oven for 15-30 minutes depending on the thickness of the filets. You want them to be cooked until they start to flake and become opaque inside, but don't dry them out. | |

Baked Salmon
6 pounds salmon, cleaned 1 whole lemon, sliced 2 whole green onions 2 whole lemons, sliced, for garnish parsley, for garnish
Heat oven to 350F. Place aluminum foil on a large baking sheet. Place fish on foil. Arrange lemon slices and green onion inside cavity of fish. Wrap foil sheets around fish and seal carefully. Bake fish for 30 minutes. Remove from oven and carefully turn fish over and bake for another 10 minutes. Check to see if fish is done by carefully unwrapping foil and inserting a knife in the thickest part. If fish is still raw in the center, return to oven for 10 minutes. When fish is done, carefully unfold foil, exposing the top side. Peel skin off from the top side and then, holding foil, flip fish over to the other side, on to a sheet of plastic wrap. Remove skin from this side. Using the plastic wrap, roll fish onto an attractive serving dish and garnish with more lemon slices and parsley. Serves 8 to 12.

Sweet Lemon Salmon
4 Salmon Fillets The juice of an entire lemon 1 T Lemon Zest 2 T Brown Sugar Splenda 1/4 C of water Salt /Pepper (to season fillets) 1 T of Extra Virgin Olive Oil Preheat Oven to 350 degrees. Put Salt , pepper, and lemon zest on your Salmon. Have a skillet with the Extra Virgin Olive Oil heating up. In a small sauce pan put lemon juice, water, and Brown sugar. Cook on low until sugar is dissolved. Brown salmon fillets on both sides for about a 2 minutes on each side. Transfer salmon to a baking dish and pour brown sugar sauce ontop of the salmon. Cook in the oven for 10-15 minutes. Serve while hot and drizzel some of the brown sugar sauce from the baking dish over salmon.

Salmon Cakes
2 (7 ounce) can salmon, drained, deboned, and flaked 1 egg, beaten 1 tablespoon olive oil 1 onion, finely chopped 1/2 cup instant potatoes (do not add milk,etc) Salt and pepper to taste ( or you can use Old Bay Seasoning if you have it)
Preheat oven to 375 degrees. Spray cookie sheet well with cooking spray. Mix all the ingredients together and shape into patties. Place on well sprayed cookie sheet, and bake for 20 minutes turning once.
Serves 8

One Dish Meal With Tuna
12 slices day old bread 6 slices American cheese 4 eggs 2& 1/2 cups milk 1 regular size can tuna Butter baking dish, cut crust from bread and butter generously. Put six slices of bread, buttered side up, in the baking dish. Put one slice of cheese on each slice of bread, cover with the tuna, top with the other 6 slices of bread, buttered side down. Beat eggs and milk. Pour over bread and refrigerate for at least one hour or overnight. Bake 1 hour at 350° | |
