Spinach Spoon Bread



1/2 cup butter; melted

10 oz. pkg. frozen chopped spinach; thawed, squeezed dry

2 green onions; sliced

1 red bell pepper; diced

5 1/2 oz. cornbread mix

4 eggs; lightly beaten

1 cup cottage cheese

1 1/4 tsp. seasoning salt



Spray inside of crockpot with cooking spray. Combine all ingredients in a large bowl; pour into crockpot. Cover and

cook on LOW for 3-4 hours or on HIGH for 1 3/4 - 2 hours until knife inserted into the center comes out clean.

Crockpot Banana Bread
 
1 3/4 cup flour
2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1/3 cup shortening
2/3 cup sugar
2 eggs, well beaten
1 1/2 cups well mashed, overripe banana (2 or 3 bananas)
1/2 cup coarsely chopped walnuts (optional)
 
Sift together the flour, baking powder, baking soda and salt.  With the
electric beater on low, fluff the shortening in a small bowl, until soft
and creamy.  Add the sugar gradually.  Beat in the eggs in a slow stream.
With a fork, beat in 1/3 of the flour mixture, 1/2 the bananas another
1/3 of the flour mixture, the rest of the bananas then the last of the
flour mixture.  Fold in the walnuts.  Turn into a greased and floured
baking unit or a 2 1/2 quart mold and cover.  Place on a rack in the
slow cooker.  Cover the cooker, but prop the lid open with a toothpick
or a twist of foil to let the excess steam excape.  Cook on high for
4 to 6 hours.  Cool on a rack for 10 minutes.  Serve Warm.
 
Makes 4 to 6 servings

Crockpot Steamed Molasses Bread



2 cup cereal, all bran

2 cup flour, whole wheat

2 teaspoon baking powder

1 teaspoon salt

1 teaspoon baking soda

1 cup raisins

1 egg

1 3/4 cup sour milk or 1 3/4 cup buttermilk

1/2 cup molasses, dark



In a medium bowl, combine bran, flour, baking powder,

salt, baking

soda and raisins. In another bowl, combine milk, egg

and molassses.

Blend into dry ingredients. Do not overbeat.

Pour into greased and floured 8-cup mold or can. Cover

with foil

and tie. Place on rack in slow cooker and pour 2 cups

hot water

around can.

Cover pot and cook on high for 3 to 4 hours. Turn

bread out on

cooling rack and serve warm or cool.

Yields 8 servings.

Crock Pot Chocolate Zucchini Bread



1/2 cup shortening

1 cup sugar

2 eggs

1 tsp. vanilla

1 tsp. soda

1/3 cup baking cocoa

1-1/4 cups pureed or blended zucchini

3 TB milk

2 generous cups of flour

1/2 cup chopped walnuts



Cream sugar and shortening in mixer, beat in eggs one at a time, add

vanilla.



Add everything else and mix thoroughly. Pour into a greased 2

pound coffee can or a crock pot bread insert. Cook 3 hours on HIGH, or

until the nut bread tests done with a wooden pick. Let stand until

it's medium cool to the touch, before unmolding.



Slice and serve with butter.

4. Place the baking tin on a rake in the crockpot.

5. Pour a little water in the

Coconut Crockpot Bread

3 C. flour
1 T. baking powder
1/2 t. salt
1 C. sugar
1 C. flaked coconut
1 egg, beaten
1 C. milk
1 t. vanilla extract

Grease and flour two 1-pound cans or inserts. Mix flour,
baking powder, salt and sugar; add coconut and mix thoroughly.
Combine liquid ingredients and stir into dry ingredients.
Mix well. Press batter into prepared pans.
Set cans in crockpot. Cover cans with 3 paper towels.
Place the lid on the cooker. Cook on high for 3 hours or
until done.
Remove cans from cooker. Cool on wire rack for 10 minutes.
Remove bread from cans and continue cooling bread on racks.

Crockpot Hamburger and Sweet Potato Bake



Ingredients:



* 1 1/2 lbs of hamburger meat, seasoned

* 4 sweet potatoes, peeled and sliced

* salt and pepper to taste

* 2 tbsp of olive oil

* 1 onion, chopped

* 1 clove of garlic, chopped

* 1 tsp of parsley

* 1 1/2 cups of whatever cheese you prefer, shredded



Directions:



1. Sautee the hamburger in the onion and garlic until it turns brown.

2. Add the remaining ingredients to a crockpot and simmer them on low

for 5-7 hours.

Crockpot Pineapple Bread

Ingredients

  • 2 3/4 cups flour
  • 1/4 cup sugar
  • 3 tsp. baking powder
  • 3/4 tsp. salt
  • 1 egg
  • 1/3 cup milk
  • 1/3 cup butter
  • 1 cup crushed pineapple
  • 1 cup chopped walnuts
  • 1 cup walnuts

Directions

Stir together dry ingredients. In separate bowl, mix other ingredients. Stir into dry mix. Put in coffee can and bake 2-3 hours on low in crock pot. Enjoy!
