Crunchy Chocolate Banana Bars



Makes 2 large servings



2/3 cup nonfat dry milk (regular or instant)

1 Tbsp unsweetened cocoa powder

1 1/2 tsp sugar

1 very ripe medium banana

1/4 tsp chocolate extract

1 1/2 oz (about 6 Tbsp) Grape Nuts cereal, or clone



First, spray a piece of foil or small cookie sheet with Pam.

Mix the first three ingredients together. Mash the banana until

thoroughly wet, mix in extract, then stir together with the dry stuff

until it all gets absorbed. Stir in the grape nuts. Form into two bars

on the foil or cookie sheet, and freeze.

Brown sugar drops

Categories: Cake/cookie 
Yield: 3 servings
1 Egg, well beaten
½ c Unsifted flour
¼ ts Soda
1 c Brown sugar, packed
2 c English walnuts, chop medium
¼ ts Salt
1 ts Vanilla
Stir together beaten egg, brown sugar, and vanilla. Stir in flour, soda, and salt. Stir in walnuts. Mix well. Drop by teaspoons on greased cookie sheet. Bake at 350 degrees for 7 to 10 minutes or until they start to brown on the edges. Do not overbake. Remove immediately and cool.

Cookies For One

1 Cup Flour
1/3 Cup Sugar
1/3 Cup Brown Sugar (totally optional)
1/3 Cup Milk
1 Egg
Raspberry, Strawberry and/or Peach Jam

Preheat oven to 350 degrees F (I use a toaster oven for only a few cookies). Lightly grease a baking sheet. Mix the flour, the two sugars, milk, and egg in a bowl. Divide into about 4-6 cookies. Place on prepared baking sheet. Sprinkle some flour on top and make a small depression in the middle. Bake for about 10 minutes. After they have cooled, fill the little depressions with jam. The cookies won't really brown, so don't worry about that. Hope you like them!

Chocolate Brownie

1 TBSP whole wheat flour
1 TBSP sugar (do not substitute)
1 TBSP unsweetened cocoa
a pinch of baking soda
a pinch of salt
1 TBSP of low fat vanilla yogurt, add more if needed to blend the mixture

Mix it all up, pop it in the microwave for just over a minute.

Serves 1
