Chocolate Ice Milk - Neesie

1 quart milk
4 ounces unsweetened chocolate
1 1/3 cups sugar

Heat milk and sugar together in a saucepan over low heat. In another
saucepan, melt the chocolate slowly over low heat. When smooth, gradually
add the milk-sugar
mixture to the chocolate, stirring constantly to keep the chocolate smooth.
Cook over medium heat until the mixture is smooth. Cool thoroughly.
Pour the mixture into a ice cream maker and freeze according to the
manufacturer's directions.

Makes 1 quart.

Mint Chocolate Chip Ice Milk - Genie
Gourmet August 1995

1/2 c sugar
1 T cornstarch
2 1/3 c 1% milk
2 large egg yolks, beaten lightly
1 T crème de menthe
1 oz bittersweet chocolate, chopped

In a sauce pan, whisk together sugar and cornstarch. Whisk in milk.
Bring mixture to a boil over moderate heat, stirring frequently. Boil,
