Old Fashioned Tomato Gravy

 

4 med. fresh tomatoes or 2 (16 oz.) cans crushed tomatoes
¼ c. bacon grease
1 to 2 tbsp. flour or enough to thicken
Dash of black pepper

Heat bacon grease over medium heat until hot. Add flour, stirring constantly until lightly browned. Add flour and pepper and let come to a boil. Cover and let set for about 5 minutes. Can be served over rice or hot biscuits.

Easy Cheese Sauce

This easy sauce comes from a 1956 Pet Milk recipe brochure.
  • 3/4 cup Pet Milk (evaporated milk)
  • 1 cup finely grated process American cheese
Heat milk in a heavy saucepan until steaming hot; do not boil. Add cheese; stir until cheese starts to melt. Remove from heat; stir until all cheese is melted and sauce is smooth.

Serve hot on macaroni, split frankfurters, and sandwiches like bacon and tomato or sliced chicken.
Makes about 1 cup.
