Noodles Mix--sonja

If using Cheddar cheese instead of the Romano or Parmesan cheese, I'd
add the Cheddar cheese when preparing the noodles. I would not store
fresh Cheddar cheese in the cupboard, without refrigeration, as part
of the mix. Hope this makes sense.


1 cup instant nonfat dry milk
2 tablespoons grated Romano or Parmesan Cheese
1/3 cup dried minced onion
1 tablespoon garlic powder
1/2 teaspoon salt
1/2 teaspoon white pepper

Combine ingredients and store in an airtight container. This will keep
for 4 months on the shelf.

To use, combine 1/4 cup Noodles Mix with 2 tablespoons melted butter
and 1/4 cup milk. Toss with pasta.

For variety, add 1/4 cup grated Cheddar cheese in place of the
Parmesan cheese for a different taste.

This will keep for 2 months in the pantry, however, I would personally store in the fridge because of the cheese; plus it will last longer. Mark the date on the zipper topped bag with your Sharpie pen. This recipe doubles and triples well.

To Use: combine 1/4 cup mix with 2 tablespoons melted butter and 1/4 cup milk. Toss with 8 ounces pasta (cooked).

Homemade Egg Beater Noodles

1/2 cup egg beaters 
1/4 cup dry non fat milk 
1/2 tsp. salt 
1/2 tsp. baking powder
flour to make stiff dough

Mix egg beaters and milk. Combine salt and baking powder. Combine ingredients and add flour to make dough. Roll out dough thin. Cut into noodles. Let dry.
