Cajun Chicken-- MaryFran

2 boneless chicken breasts, skinless
1/4 tsp. onion powder
1/4 tsp. dried thyme
1 clove garlic, minced
1 Tbsp. Skim milk
1/4 tsp. each white, red and black pepper
non-fat cooking spray

Preheat oven to 375 degrees F. Rinse chicken and pat dry. Spray 13x9x2 inch pan with non-fat cooking spray. Place chicken on pan, meaty side up. Brush chicken breasts with milk. Sprinkle garlic over the tops of chicken breasts. Mix onion powder, thyme, and white, red, and black pepper in a small bowl. Sprinkle mixture over chicken. Bake at 375 degrees F. for 45 to 55 minutes. Makes 2 servings.

Approximate Nutritional Breakdown Per Serving:
Cal 267, Pro 53g, Carb 1.5, Fat 6g, Fiber 0.


Tip: Serve with lemon wedge, red pepper slices and sprig of parsley, as garnish.

Andouille Sausage Jambalaya - Genie

3 lbs Andouille sausage sliced, (may use smoked sausage if not
available)
2 Green peppers, cut into chunks
2 Onions, cut into chunks
6 Ribs celery, cut into thick slices
3 16 oz Canned tomatoes
2 T Dried thyme
Salt, to taste
Cayenne pepper, to taste
Tabasco sauce, to taste

Cut up all ingredients and place into your crock pot. Add
spices/tabasco etc. to the tomatoes and pour over the top. Cover the
crock pot and cook on high for 5 - 6 hours.

Low Carb Jambalaya - CP

1 cup chopped onion
1 cup chopped green bell pepper
1 cup chopped celery
2 cloves garlic -- chopped
28 ounces canned tomatoes -- undrained
2 cups smoked sausage -- chopped
1 tablespoon dried parsley
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon Tabasco sauce
3/4 pound medium shrimp -- raw, peeled, devein
Add all ingredients EXCEPT the shrimp into a 3-6 quart slow cooker.
Cover & cook on low for 7-8 hours (or on high for 3-4 hours).
Stir in cleaned shrimp, cover & cook on low for about 1 hour or until shrimp are pink & firm.

Serves 8
