Frozen Coffee Drink - Lindah
 
 First of all, I make a
pot of really strong decaf coffee (use a few extra scoops of the
coffee) and keep it chilled.  My basic recipe is:

6 ice cubes-- crush in the blender
4-6 oz chilled decaf coffee
2-4 oz unsweetened soy milk (I've used the plain and Soy Slender; you
could also use cream instead)

For a chocolate-raspberry flavor (my favorite):
I add a tsp. of cocoa, some SF chocolate syrup, and some SF raspberry
syrup

For chocolate almond or chocolate coconut:
Add a tsp. of cocoa, SF chocolate syrup, and a tsp. (or a little
less) of almond or coconut extract

I imagine for caramel, you would just dump in some SF caramel syrup.

Then blend it all up.  I find this to be plenty sweet, without adding
extra sweetener (the SF syrups already have splenda in them).  But
that will definitely vary person to person.

Strawberry Kiwi Mock Margarita-- Lindah 

Citrus juices never tasted so good. This mock cocktail is a good source of vitamin C, naturally fat free and low calorie.

Prep: 5 min

1-1/2 cups cold water
1 cup cold orange juice
2 Tbsp. lime juice
1 tub CRYSTAL LIGHT TROPICAL PASSIONS Strawberry Kiwi Flavor Low Calorie
Soft Drink Mix
1 qt. (4 cups) ice cubes

PLACE water, orange juice, lime juice and drink mix in blender container; cover. Blend until drink mix is dissolved.

ADD ice; cover. Blend on high speed until smooth.

Makes 6 (1 cup) servings

Special Extra: Garnish each glass with a strawberry fan. Make 4 lengthwise cuts from point of strawberry almost to stem end.
Fan strawberry open at cuts and slide over edge of glass.

EXTREME CHOCOLATE SHAKE


Recipe by Tiffany

  • 1 can Atkins Ready-Drink Chocolate Shake
  • 1 tsp. vanilla extract
  • 2 tbsp. unsweetened baker's cocoa
  • 1/3 cup heavy cream
  • 7 ice cubes

Add all ingredients in blender. Use ice-crusher mode to blend until somewhat chunky, but drinkable.


  • Servings: 3 glasses  
  • Carbs: 2g/serving

Banana Nog

1 pkg Low Carb Banana Pudding/Shake Mix
1/2 cup water
1/2 teaspoon rum extract
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1 packet Splenda
6 ounces lemon-lime flavored diet soda

Mix all ingredients in blender on low speed and enjoy!

Serves 1

Per serving

Carbs 5gm
Fat 2gm
Protein 15gm
Calories 98

Banana Shake

1 package Low Carb Banana Pudding/Shake Mix
6 ounces diet creme soda
4-5 ice cubes

Mix all ingredients in a blender until creamy smooth

Low Carb/Low Cal/Hi Nutrient Fruit Smoothie

1 cup plain yogurt
1/3 to 1/2 packet artificially sweetened
Jell-O - I like cranberry
1 scoop protein powder - no flavor or vanilla
1 cup ice cubes
1 cup assorted 'allowed' fruits - I like frozen blueberry, frozen
blackberry, frozen raspberry, banana - the banana helps with
texture for any fruit combo
Instead of protein powder, add a tablespoon or two of
canned (cooked) beans - I like black-eyed peas or pintos

Blend all but ice until well mixed. Add in ice and blend until it's a thick
but drinkable texture. I prefer to spoon it out. Makes one full meal or
snack for two to share.

Frozen Coffee - Genie 
Ingredients:
  • 4 Cups strong brewed coffee (espresso or regular)
  • Splenda®, NutraSweet® or Sweet-N-Low® to taste
  • 3/4 Cup heavy cream
  • 1/2 tsp vanilla extract
  • 2 tsp brandy
Pour coffee and desired sweetener into ice cube trays and freeze hard. Prepare whipped topping right before you're ready to serve. Whip the cream and blend in the other ingredients. Refrigerate. Empty the frozen coffee cubes into the food processor - you may have to do this in batches - and process until you have a chunky slush. Serve immediately with the flavored whipped cream.

Makes 6 Servings.   Less than 1 carb per serving.
