Low Fat Raisin Bread

1 1/4 cups whole wheat flour, sifted
3 Tablespoons baking powder, sifted
1/4 cup sugar
1 1/2 cups all purpose flour, sifted
1/4 cup light brown sugar
3/4 cup seedless raisins
2 egg whites
1 1/2 cups lite evaporated milk


Preheat oven to 375: F. In large bowl, combine all dry ingredients including raisins and stir well. In separate bowl, beat egg whites with electric mixer on high until slightly stiff. Add milk gradually to egg whites; mix well with whisk. Gradually add milk mixture to dry ingredients. Mix with large wooden spoon until dough is formed. Dough will be slightly stiff but moist. Divide dough in half and place in nonstick bread pans. Bake for 45 minutes or until done. Cool for 30 minutes. Remove from pan and slice.

Makes about 16 slices.

Calories 137 Fat 1 g Fiber 0.5 g.

Apple Streusel Nut Loaves
22 servings
30 ozs nut bread mix   Topping:  
2 c fat-free milk   1/2 c light brown sugar, packed  
2 med Granny Smith apples, chopped fine   2 tbsps unbleached flour  
4 tsps cinnamon   1 tsp water  
2 whole eggs   1 tsp cinnamon  

Preheat oven to 350. Prepare a 22 miniature loaf pans with cooking spray and flour; set aside. In a mixing bowl, combine bread mixes, foil packets from mixes, milk, chopped apples, four teaspoons cinnamon, and eggs. Mix well. Pour about half cup or three ounces of batter into each prepared pan; set aside. Meanwhile, to prepare topping, combine brown sugar, flour, water, and remaining cinnamon. Mix well. Sprinkle evenly over top loaves. Bake for 30 minutes, or until toothpick comes out clean.

Applesauce Loaves
30 servings
18 1/4 ozs yellow cake mix   2 tbsps olive oil  
3 ozs fat-free vanilla pudding mix   2 tsps cinnamon  
1 c sweetened applesauce   1/2 tsp nutmeg  
3/4 c egg whites, slightly beaten   1 c raisins  
1/2 c water    

Preheat oven to 350. Prepare tw8"x4" loaf pans with cooking spray. In a mixing bowl, combine cake mix, pudding mix, applesauce, egg whites, water, oil, cinnamon, and nutmeg. Mix well. Fold in raisins. Spread batter evenly between pans. Bake for one hour, or until toothpick inserted in center comes out clean.

Dried Cherry-Almond Bread

Dried cherries lend a wonderfully tart, fruity flavor to this tender nut loaf. Look for the dried tart red cherries in the produce department or in the dried-fruit section of your supermarket. 

1 lb. loaf

3/4 cup milk 
1 tablespoon butter or margarine 
1 large egg 
3/4 teaspoon salt 
2 cups bread flour 
1/3 cup dried tart red cherries or dried cranberries 
1/4 cup slivered almonds, toasted (see How to Toast Nuts tip below) 1 tablespoon sugar 
1 1/2 teaspoons FLEISCHMANN'S Bread Machine Yeast 

Directions
Use the 1-pound recipe if your machine pan holds 10 cups or less of water. Add ingredients to bread machine pan in the order suggested by manufacturer, adding dried tart red cherries and almonds with flour. 
Recommended cycle: Basic/white bread cycle; light or medium/normal color setting.

Zucchini Bread
 
1-1/2 cups all-purpose flour
1-1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 tsp ground cinnamon
2 large eggs
1-1/4 cups SPLENDA® Granulated sugar
1/3 cup canola oil
1/2 cup unsweetened applesauce
1 tsp vanilla extract
1 cup shredded zucchini squash
1/2 cup chopped walnuts
 
Preheat oven to 350°F. Lightly spray an 8 x 4-inch loaf pan with vegetable cooking spray.

Combine flour, baking powder, soda, salt and cinnamon; set aside.

Beat eggs and SPLENDA® Granulated on medium speed with an electric mixer for 5 minutes. Add oil, applesauce and vanilla; beat at medium speed 1 minute or until blended. Add flour mixture; beat at low speed just until blended. Stir in zucchini and walnuts. Spoon batter into prepared pan.

Bake 40 minutes or until cake tester inserted in center comes out clean. Cool in pan on a wire rack 10 minutes; remove from pan and cool on a wire rack.

Banana Pecan Loaf

1 3/4 cups all purpose flour
1/2 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda

1 cup very ripe mashed banana
1/3 cup unsweetened applesauce
2 large egg whites
1 large egg
1/4 cup chopped pecans

Preheat oven to 350F. Spray a 9 x 5 loaf pan with nonstick cooking spray. In a large bowl, combine flour, sugar, baking powder, baking soda and salt. In a medium bowl, mix mashed banana, applesauce, egg whites and egg with a fork. Stir banana mixture into flour mixture just to moisten. Spoon batter into pan, sprinkle with chopped pecans. Bake 40 to 45 minutes. Cool loaf in pan on wire rack for 10 minutes. Remove loaf from pan, cool completely.

Each slice: 2 gr. total fat (0 gr. saturated), About 110 calories, 3 gr. protein, 22 gr. carbohydrate, 13 mg. cholesterol, 140 mg. sodium
