Oatmeal Pie

3 eggs, well beaten
1 cup white sugar
2/3 cup brown sugar
2/3 cup coconut
2/3 cup quick oats, dry
3 tablespoons evaporated milk or cream
2 tablespoons butter
1 teaspoon vanilla
pinch salt

Mix all ingredients together and bake in an unbaked pie shell until done.

Oatmeal Pie

This has been a family favorite for years.

2 eggs, slightly beaten
2/3 cup melted butter
2/3 cup white corn syrup
1 tablespoon brown sugar
2/3 cup oatmeal
1 teaspoon vanilla extract
1 (9-inch) unbaked pie crust

In a medium bowl, combine eggs, butter, corn syrup, brown sugar, oatmeal, and vanilla; mix well. Pour into unbaked pie crust. Bake at 350 degrees F for 45 minutes, or until firm.

Amish Oatmeal Pie

1 1/2 cups milk
3 tablespoons melted margarine
1 1/3 cups dark brown sugar
3 eggs, lightly beaten
2/3 cup rolled oats
2/3 cup coconut
1 (9 or 10-inch) unbaked pie shell

Preheat oven to 425 degrees F.

Combine all ingredients. Mix thoroughly. Pour in shell. Sprinkle with additional coconut. Bake 10 minutes. Reduce heat to 350 degrees F and bake for 30 minutes or until knife inserted in middle comes out clean.

1 unbaked pie shell

3/4 c. dark corn syrup

1/2 stick margarine, melted
1/2 t. salt
1 t. vanilla
1/4 c. pecans, chopped

Directions

Measure all ingredients into bowl and stir until well blended. Pour into pie shell and bake for 1 hour at 350°.

Oatmeal Raisin Cookie Pie

1 6-ounce graham cracker pie crust
3 eggs
1 cup light corn syrup
1/2 cup packed brown sugar
3 tablespoon melted butter or marg
3/4 cup quick cooking oats
1 tablespoon all purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon salt
Whipped cream or ice cream
3/4 cup raisins

Heat oven to 325. Beat together eggs, corn syrup, sugar and butter. Add
remaining ingredients and mix well. Pour into crust.
Place on baking sheet and bake for 45-50 minutes or until top is golden brown
and filling is just set in center. Cool. Serve with whipped cream or ice cream.
Makes one pie.

This tastes like a cookie but is baked in a pie shell.

3/4 c. brown sugar, packed
1/2 c. butter or margarine
1/2 c. currants
1/2 c. chopped walnuts
9" pie shell
Whipped cream

Combine all ingredients; mix well. Pour into pie shell (unbaked). Bake at 350 degrees for 40 to 45 minutes or until filling browns and knife blade inserted near center comes out clean. Cool. Top with whipped cream and serve.
