Maple Sugar Brown Butter Tart - BettyGa 
------------------------------- 
3/4 cup maple syrup
3/4 cup corn syrup
1/2 cup brown sugar
1 cup maple sugar
5 whole eggs
2 egg yolks
3 tablespoons browned butter
1 (9 to 10-inch) baked flan shell (see note)
Note: Flan shell can be either pie dough or sweet crust
Preheat oven to 350 degrees F.
Combine maple syrup, corn syrup, brown sugar, and maple sugar and mix lightly.
Add whole eggs, egg yolks, and browned butter. Mix until well incorporated. Pour into shell and bake until set for 25 to 35 minutes

Yield: 8 to 10 servings
Prep Time: 10 minutes
Cook Time: 35 minutes
Difficulty: Easy

Maple Cream Pie
Filling
1 can sweetened condensed milk
2/3 cup maple syrup
Pinch salt

Topping
2 cups whipping cream
1/2 cup powdered sugar
2 teaspoons vanilla extract
Pinch salt
Chopped pecans

Filling: Cook sweetened condensed milk, maple syrup and salt over low heat,
stirring constantly until it bubbles in the middle. Pour into a baked pie shell.
Chill for 1 hour.

Topping: Whip whipping cream, powdered sugar, vanilla extract and salt until
thick. Pour on top of pie filling and sprinkle with chopped pecans.

Maple Syrup Pie

1/2 cup melted butter

1 cup heavy maple syrup          
1 1/2 cup pecan halves
1/2 cup firmly packed brown sugar

Sweetened whipped cream

Maple Walnut Cream Pie
 
Crust
9 inch premade or make own
 
Filling
1 cup pure maple syrup or use Maple flavored pancake syrup
1/2 cup milk
2 egg yolks, slightly beaten
1 enevlope unflavored gelatin ( 1 Tblsp.)
1/4 cup water
1 tsp. maple flavoring
1 cup whipping cream, whipped
3/4 cup chopped walnuts
Sweetened whip cream  garnish
 
Bake crust according to package directions....... cool
 
Filling
Combine syrup and milk in small saucepan, cook on low heat til hot
Do not boil it
stir small amount of the hot mixture gradually into the egg yolks
Return egg mixture to the saucepan, bring to boil
simmer for about 1 min.
soften gelatin in water
remove saucepan from heat and add in gelatin and maple flavor
stir until gelatin dissovles
Put in fridge until mixture begins to thicken
Fold whipped cream into the maple mixture, fold in nuts
spoon into the pie crust
Refrigerate 2 hours
Garnish with whipped cream before serving

AMISH MAPLE CREAM PIE

New England Maple and Apple Pie Recipe

  • Prepared double crust for 9" pie
  • 5 cups fresh picked apples, peeled and sliced
  • 3/4 cup Pure  Maple Syrup - Medium or Dark Amber
  • 3 tablespoons cornstarch
  • 1 fresh egg (Check Expiration Date)
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt (optional)
  • Maple granulated sugar (optional)
PREHEAT oven to 425 F. degrees.

Place peeled and sliced apples in pie shell. Mix remaining ingredients in a bowl, and pour over apples. Place top crust over filling, cut steam vents, and sprinkle with maple sugar (optional). Bake for 10 minutes, then reduce oven heat to 350 F. degrees and continue baking 25 to 30 minutes. Yield: 8 delicious servings. Serve warm with French Vanilla Ice Cream...!!!

Maple Walnut Cream Pie


2 cups milk
Dash of salt
2 cups pure maple syrup
1 teaspoon vanilla
3 egg yolks, well beaten
½ cup chopped walnuts
6 tablespoons flour
½ cup yogurt or whipped cream

Combine milk, syrup, egg yolks and flour in a double boiler. Cook slowly over simmering water for
about ½ hour. Add a dash of salt and vanilla. Pour into baked pie shell. Sprinkle with half of the
nuts. Chill. Shortly before serving, spread on yogurt or whipped cream and sprinkle the rest of
the nuts over the pie.

Serves 8

Maple Pecan Pie

1/4 c. butter
1/2 c. Vermont Maple Sugar ( or granulated sugar )
1/2 tsp. salt (optional)
1 c. Vermont Maple Syrup
3 eggs
1 c. pecan halves (or other nuts may be substituted)
1 unbaked 9" pie shell

Melt butter, add sugar, salt, maple syrup and eggs.
Beat until well blended. Add pecans - break large halves in two. Pour filling into crust. Bake at 375 degrees for 35 to 45 minutes. Chill before serving.
