Cookies and Candy Pizza



1 pkg peanut butter cookie mix

1/3 cup oil

1 egg

Assorted toppings

1 cup miniature marshmallows

1/3 cup semisweet chocolate chips, melted



Preheat oven to 350 degrees F.



Stir cookie mix, oil, and egg in medium bowl until a soft dough forms. Press dough in ungreased 12" pizza pan, forming a narrow rim around edge of pan. Sprinkle toppings on dough.



Bake 10 minutes. Sprinkle marshmallows on top. Bake 10-15 minutes or until marshmallows are lightly browned and cookie is set at the edge. Cool completely in pan, about 1 hour. Drizzle melted chocolate over top.

Chocolate Chip Pizza



1/2 c. sugar

1/2 c. brown sugar, firmly packed

1/2 c. margarine, softened

1/2 c. peanut butter

1/2 tsp. vanilla

1 egg

1 1/2 c. flour

2 c. miniature marshmallows

6 oz. pkg. chocolate chips



Heat oven to 375 degrees. In large bowl, combine first 6 ingredients.

Blend well. Stir in flour. Press dough evenly over bottom of a 12 or 14-

inch pizza pan, forming rim along edge. Bake at 375 degrees for 10

minutes. Sprinkle with marshmallows and chocolate chips. Continue to

bake for 5-8 minutes or until marshmallows are puffy and lightly

browned. Cool, cut into wedges.



Store in tightly covered container.

Pizza Cake



1 box Yellow cake mix

2 T margarine

2 Eggs

1/4 cup Brown sugar

1/4 cup Water

1/2 cup Nuts of your choice -- chopped

1 can Mandarin oranges

1 can Fruit cocktail

1 cup Pineapple chucks

2 Bananas

1 package Strawberries

2 tablespoons Cornstarch

1/2 teaspoon Sugar

1/4 teaspoon Cinnamon

2 large Containers Cool Whip

Coconut



Mix cake mix, butter, eggs, brown sugar and water. Add nuts. Batter will be thick.

Grease and flour a 16" and 12" pizza pan.

Spread on batter and bake at 350 degrees for 12 to 15 minutes.

Drain canned fruit and save 1-1/2 cups of juice.

Bring to a boil the juice and 2 tablespoons cornstarch, 1/2 teaspoon sugar and 1/4 cinnamon.

Cook until thick, but will still pour.

Cover cooled cake with Cool Whip and top with fruit.

Sprinkle with coconut and drizzle with cooled sauce.

"Crust":

1 (20 oz) package store-bought sugar cookie dough,

refrigerated



"Sauce":

1 (8 oz) package cream cheese, softened

1/3 cup sugar

1/2 tsp vanilla



"Toppings":

Fresh or canned peach slices, drained

Whole strawberries, cut in half

Fresh or frozen blueberries, drained

Kiwi fruit, peeled

Raspberries

Grapes, no seeds

Bananas

Pineapple chunks or rings, drained

Apples, washed, peeled and cored

Mandarin oranges, drained

Fancy Fruit Dessert Pizza Glaze:

1/4 cup orange marmalade (can also use apricot,

strawberry or

raspberry)

1 T water



Optional Drizzle:

1/2 cup chocolate chips, melted



Pre-Heat oven to 375F

Slice cookie dough as directed on package

Arrange cookie dough in single layer in bottom of a

15x10x1-inch

baking pan (A large pizza pan will also work.)

Using floured fingers, press dough evenly onto pan to

form crust

Bake at 375F for 16-20 minutes or until golden brown

Cool crust completely

While crust is cooling, in a small bowl, beat together

cream cheese,

sugar and vanilla until fluffy

Spread mixture over cooled cookie crust

Refrigerate several hours

Arrange fruit in attractive layers or designs over

cream

cheese "sauce" layer

Combine marmalade and water into a glaze and carefully

brush glaze

over fruit

Drizzle warm chocolate chip mixture for additional

sweet topping

Refrigerate at least 1 hour before serving

Cut into slices or squares and serve immediately

Store any leftovers in the refrigerator



Make 12 servings.

Grasshopper Pizza



Ingredients:



1 pkg. (18oz) refrigerator chocolate chunk cookie dough

1/2 pkg. Keebler Grasshopper cookies

1/2 cup white chocolate morsels

vanilla ice cream



Directions:



Press cookie dough evenly in the bottom of an ungreased 12 inch pizza

pan or baking stone.

Break thin mints into halves or thirds; press cookie pieces into dough,

covering evenly.

Bake at 350 F. for 12-18 minutes.

Place white chocolate morsels into a small self closing bag.

Microwave the bag on med-high setting for 40-50 seconds or until

chocolate is melted.

Snip one corner of bag. Hold bag tightly at top and drizzle.

Strawberry Pizza

 

1 cup flour
1/4 cup powdered sugar
1 cube margarine (1/2 cup)
Cut the above together and pat onto Pizza pan, bake at 325 for 15 min. Cool.
 
8 oz. cream cheese, softened
1/2 tsp. vanilla
1/2 cup sugar
1/4 cup lemon juice
Beat the above together until fluffy and spread over cooled crust.
 
Topping:
1 cup mashed, fresh strawberries   (or 1 cup frozen)
4 Tbs. sugar
1 Tbs. cornstarch
Combine the topping ingreds. and cook until thick and blended well.  Cool.
Pour or spread cooled topping over cream cheese mixture.  Add Sliced strawberries to cover the top.  Cover with plastic wrap and store in refrigerator 2 or more hours.
 
Cut and serve as pizza.

Chocolate Macaroon Pizza

1 pkg. (450g) fudge brownie mix
2 egg whites
2 pkg. (200g each) sweetened flaked coconut
1 can (300mL) sweetened condensed milk
1/2 C. sliced almonds
1 square (1oz/30g) semisweet chocolate
1 tsp. vegetable oil

Preheat oven to 375°F. Cut a 15-inch circle of parchment paper; place on large round stone. Prepare brownie mix according to package directions. Pour batter onto parchment paper, spreading into a 14-inch circle. (Do not bake without parchment paper or batter will run off baking stone while baking) Bake 15-18 minutes or until brownie is set. Do not over bake. Remove to cooling rack.

In clean bowl, separate egg whites from egg yolks . (Set egg yolks aside for another use.) Fold coconut and sweetened condensed milk into egg whites. Spread coconut mixture over top of brownie base to within 2 inches of edge. Sprinkle with almonds. Return to oven and bake 25 minutes or until edges of coconut are deep golden brown. Remove to cooling rack. Finely chop chocolate. Melt chocolate with oil in micro-wave, uncovered, on MEDIUM 2 minutes, stirring once, or until chocolate is melted and smooth.

Using a pizza cutter, cut pizza into serving wedges. Drizzle with melted chocolate. Serve

TIP: Brownie base can be baked earlier in the day and cooled before finishing. Then top, bake and serve warm, if desired.

Yields 16 servings

Raspberry Cheesecake Cookie Pizza

3/4 cup butter or margarine
3/4 cup sugar
1 egg yolk
1 teaspoon vanilla
1 1/2 cups all purpose flour
8 ounces cream cheese, softened
1 egg
1 tablespoon sugar
1/3 cup seedless raspberry preserves
1/4 cup sliced almonds, toasted

Beat the butter or margarine in a large mixing bowl with an electric mixer on medium to high speed for 30 seconds. Add the 3/4 cup sugar and beat till combined. Beat in egg yolk and vanilla till combined. Beat in as much of the flour as you can with the mixer. Stir in any remaining flour with a wooden spoon. Spread dough in a lightly greased 12 or 13 inch pizza pan. Bake in a 350F oven about 25 minutes or till golden. Meanwhile, beat together cream cheese, 1 egg and the 1 tablespoon sugar till smooth. Spread over hot crust to within 1/2 inch of the edge. Dollop reserve on top. With a knife, carefully swirl preserve to marble. Sprinkle with almond. Bake 5 to 10 minutes more or till filling is set. Cool in pan on a wire rack. Cut in wedges. Store in refrigerator. Makes 12 to 16 servings.

Streusel Strawberry Pizza  

1 (18.25 oz.) white cake mix
1 1/4 C. quick-cooking oats
1/3 C. butter or margarine, softened
1 egg
1 (21 oz.) can strawberry pie filling (or flavor of your choice)
1/2 C. chopped nuts
1/4 C. packed brown sugar
1/8 tsp. ground cinnamon

In a mixing bowl, combine dry cake mix, oats and butter until blended; set aside 3/4 cup for topping. Add egg to the remaining crumb mixture and mix well. Press into a greased 12-inch pizza pan. Build up edges and flute if desired. Bake at 350ºF for 12 minutes.

Spread pie filling over crust to within 1 inch of edges. Combine the nuts, brown sugar, cinnamon and reserved crumb mixture; sprinkle over filling. Bake for 15 to 20 minutes or until lightly browned.

Cool on a wire rack. Refrigerate any leftovers.

Yields: 8-10 servings

Peanut Butter Banana Brownie Pizza

1 package brownie mix
1 8 ounce package cream cheese, softened
1/4 cup sugar
1/4 cup creamy peanut butter
3 large bananas, peeled, sliced
1/4 cup coarsely chopped peanuts
2 squares semisweet chocolate
2 teaspoons butter or margarine

Prepare brownie mix as directed on package. Spread butter evenly in greased 12 inch pizza pan. Pour brownie mix on pizza pan. Bake 20 minutes. Cool completely on wire rack. Mix cream cheese, sugar and peanut butter with electric mixer on medium speed until well blended. Spread over brownie. Arrange banana slices over cream cheese mixture; sprinkle with peanuts. Cook chocolate and butter in heavy saucepan on very low heat, stirring constantly until just melted. Drizzle over bananas and peanuts. Makes 12 servings.

1/2 Teaspoon Baking Powder
1/8 Teaspoon Baking Soda
1/2 Teaspoon Salt
1 Cup Brown Sugar

1 Cup Marshmallows ( Small)

 
Preheat oven to 350 degrees. Mix together flour, baking powder, baking soda, salt, brown sugar, egg, and vanilla exract. Press into a 9 x 14- inch greased pan. Top with chocolate chips: then top with marshmallows. Bake at 350 degrees for 20 minutes. Cut into bars.
NOTE: On a personal note, triple the recipe if you want to fill a cookie sheet.
