Baked Turkey Thighs with Potatoes and Gravy        

2 turkey thighs
20-30 fresh mushrooms, cut in 1/2
8 potatoes, peeled and quartered
1 onion, sliced
4 tsp. salt
4 tsp. ground black pepper
4 or 5 cloves of fresh garlic, chopped
1 cup extra virgin olive oil
1/4 cup water

Preheat oven to 350º F.

Season turkey thighs with 2 teaspoons of salt and 2 teaspoons pepper.

Braise in a heavy skillet with hot oil until brown. Flip over and brown on
the other side. Remove thighs from the skillet and drain the oil. Don't wash.

Put the potatoes, mushrooms and the onions in the bottom of the hot heavy
skillet or a Dutch oven.

Place the turkey thighs on top of the potatoes, onions and mushrooms.
Sprinkle the garlic over all, and add a 1/4 cup of water.

Bake, covered, for 1-1/2 hours. 

Remove turkey, potatoes and mushrooms to a serving platter and make the gravy
with the remaining pan juices.

Italian Turkey Thighs

1 tablespoons vegetable oil
1 to 2 turkey thighs, about 1 1/2 pounds, boned and cut into 1 inch cubes
1 large tomato, diced
1 green pepper, diced
1 clove garlic, minced
2 tablespoons lemon juice
1 teaspoon dried basil or mixed Italian seasoning
1 teaspoon salt
1/4 teaspoon pepper
cooked spaghetti
4 teaspoons Parmesan cheese

Heat oil in large saucepan over high heat. Brown turkey. Reduce heat to simmer and add all remaining ingredients except spaghetti and cheese. Cover and cook until meat is fork tender, about 45 minutes. If necessary, to thicken sauce, mix 2 teaspoons cornstarch with 3 tablespoons water and stir into sauce. Bring to a boil, stirring until thickened. Place turkey over cooked spaghetti and top with sauce and Parmesan cheese.

Austrian Style Turkey

(Serves 4)

I N G R E D I E N T S

1 tsp paprika
1/8 tsp pepper
1 1/2 lbs turkey thighs, skinned, boned, and cut in 1/4" strips
2 Tbs margarine, divided
1 1/2 cups onion, finely chopped
1 clove garlic, minced
1 bay leaf
1/3 cup turkey broth
1/4 cup tomato sauce
1/4 cup sour cream
1/2 tsp sugar

D I R E C T I O N S

Sprinkle paprika and pepper over turkey strips. Melt 1 Tbs margarine over medium-high heat in a large saucepan and saute turkey until lightly browned. Remove from pan and set aside. Saute onions and garlic in remaining Tbs of margarine until onions are translucent. Add bay leaf, broth, tomato sauce, and turkey. Bring to boil then reduce heat to low, cover, and simmer about 15 minutes until turkey is tender, stirring occasionally. Fold sour cream and sugar into mixture and heat through. Serve with egg noodles.
